Absolutely Wonderful Acorn Squash!

Today I went to the city for a professional development workshop at Columbia. After I was done learning about book clubs and how to get children to learn how to interpret I met Danny for a late lunch. After we ate lunch I had VERY important business to attend to.....working on getting my Christmas shopping done. I can't be very specific because my gift-ees will be reading..but let's just say I got a BUNCH done. I was pretty proud of myself because I didn't even buy ANYTHING for myself at J.CREW...even if I did want to buy out the entire store.  


I did make my way to Starbucks so I could get one treat for myself...a grande extra hot non-fat misto (it's like a cheaper version of a latte with steamed milk and coffee). I walked around a ton and sure was exhausted by the time I got back on the F train to go home sweet home. I was pretty successful, except for one slightly frustrating 30 minutes..however I am back on track due to the amazing-ness of online shopping.


After sitting on the couch for ever  not that long I started dinner. Tonight I am making turkey burgers, homemade rolls, and acorn squash.  I will post the turkey burgers tomorrow, but here is how I am making the acorn squash. (Can you believe I never had this before last week??? The people in the blog world convinced me to try!)


First, preheat the oven to 400 degrees.  Then I cut the acorn squash in half, took the seeds out and put it face down in a glass pie dish in about an inch of water.  (It needs to cook for about 45 minutes.) Then I sauteed veges in a saucepan in a tiny bit of olive oil and low sodium chicken brown (with chopped garlic and onion).  When the squash was finished I put the veges (carrots, kale, black beans) in the squash and topped it with feta cheese. Can you tell I am obsessed with that cheese???

I can't believe it took me 25 years to try out this type of squash. It is a MUST try in my book! I had such a successful day, workshop. lunch with Danny and a couple people to check off my TO BUY Christmas list. I think I could walk around the city, all day every day. I would definitely have NO money though if I did that! Hope you had a great Monday. Tomorrow it's back to work!

Oh i've never made this type of squash before! It looks SO good! Does it have a similar flavor to butternut or spaghetti squash?

It's along the same lines. It's a little bit softer and sweeter than butternut, but if you like that you will like this!

How have you of all vegetable lovers never had acorn squash before?! How have we not talked about it? Try it w/ spray butter, cinnamon, and a little brown sugar (put that stuff on after baking for 45 mins, then cook for 5 more) SO GOOD :)

Acorn squash really is amazing. I tried growing it without any luck -- I'm a failure when it comes to growing winter squash. Your post makes me want to go buy some for dinner.
