Happy Friday! Today the 4th grade is going to see Fantastic Mr. Fox. What a nice relaxing Friday at school!
Last night when I got home I wasn't sure what to make for dinner. I didn't take anything out so I looked in my fridge and there wasn't much there. Two nights ago I had boiled/cooked a bag of dried chickpeas and then put them in the fridge so I could make hummus. I took that out and that was the first thing I tackled.
I used:
- 2 cups cooked chickpeas (if you use a can, rinse them before use)
- 1 tablespoon + 1 teaspoon extra virgin olive oil
- 2 tablespoons lemon juice
- 1 1/2 teaspoon seat salt
- 1/4 teaspoon pepper
- 1 teaspoon parsley
- 6 to 8 tablespoons water (to thin as desired)
- a sprinkle of lime juice
Combine chickpeas and olive oil in food processor and puree. Add the rest of the ingredients, except the water and puree again. Add the water slowly to thin as desired.
Yum - best hummus I have made ever (in my 4 attempts so far!)
The next thing I did was make stuffed peppers. I made Danny's how I made them for Thanksgiving and I made mine with quinoa, sun dried tomatoes and spinach. (We also had a little pasta and sauce for dinner, our meal wasn't just these peppers! :) )
