Chicken with Peanut Sauce

Good afternoon and evening everyone! My blog posts have been off, time wise, but hopefully I'll be back to a regular schedule tomorrow. I love Tuesdays because I get to come home and read blogs and catch up on everything I have missed. Partly because I cannot stay awake at night and keep passing out on the couch, which inhibits my blog reading. 

This morning Danny and I woke up and went to the gym. My stomach wasn't feeling 100% because I ate about 10 servings of broccoli last night but I hate bailing on the gym because then Danny can't go because I drive him there (he takes the subway from the gym right to work). It's great because it gives me accountability. I took it easy at the gym which meant a combination of walking and running at a snails pace, but it was still a workout, so it was good enough for me. 

Yesterday to go with my nut butter fries (which I polished off after school today, does anyone come home from work/school like a ravaging animal??) I made chicken with peanut sauce. 


I mixed together peanut butter, soy sauce and teriyaki sauce

Chicken with Peanut Sauce

2 tbsp peanut butter
1/4 cup soy sauce
1/4 cup teriyaki sauce
2 cloves garlic minced

Whisk together all of the ingredients in a small bowl. Brown garlic in olive oil in a medium sized saucepan. Add chicken and brown on both sides (3-4 minutes). Add the sauce mixture to the top of the chicken. Cook on a low flame, flip about 5-7 minutes and add more of the sauce. Heat until cooked through. Sprinkle with salt and pepper. 

After dinner I "indulged" in my favorite dessert right now:




This mixture was 1 banana,  a big cup of Trader Joe's very cherry mix, 1 tablespoon dark cocoa powder, with cacao nibs on top. YUM! I basically could/would eat this instead of dinner. 


And on another note, I made more of Averie's No Bake Granola Bars. I am OBSESSED with them and so is Danny. I really can't complain about making this if Danny will eat it too. 

This mix was different from the 1st ones I made. It had oats, banana, peanut butter, applesauce, carob chips, walnuts, chia seeds, and then all the other ingredients like vanilla extract, cinnamon, etc. 
These are DANGEROUS!

I make this same sauce for pork never had it on chicken, sound fabulous and looks even better thanks for this idea cant wait to try on chicken~

I don't really do much snacking but when I do, I am really hooked on hummus or green juice!

My hubby was extra sweet today so I am making him kettle corn. My dessert will look more like yours!

Dessert looks great! I haven't had banana soft serve in a while - think I'll make some tonight :)
Those bars look great - I'm currently obsessed with date balls, as you very well may know :P I've got my mom hooked, too! She loves them.

Everything looks great and yes, I come home from work and usually have a snack (or 2 or 3) within about 15 minutes :)

i am also a fan of peanut sauce, I make my own and have posted about it before but anything with peanut sauce is amazing...right?!
