I went for a walk to my gym and then did 20 minutes on the elliptical and walked home (this was yesterday NOT this morning!). When I got home I didn't really feel like cooking, so we had omelettes. I really wanted waffles and ice cream but I don't have a waffle maker. Boo, I need to get one. For dessert Danny continues to finish off our amazing crumb cake.
Uncle Tommy is known for his appetizers in my family..and well his desserts....and his knack for creativity...and perfection...and many other things... I posted his crumb cake recipe awhile back, but I feel like I NEED to repost it with proper pictures.

Uncle Tommy's Crumb Cake
Ingredients
1 box yellow cake mix
2 eggs
1 1/2 cups water
2 cups of flour
1/2 cup sugar
2 tsp cinnamon
1 1/2 tsp vanilla extract
2 sticks of butter
Steps:
Take any basic, boxed yellow cake mix, add 2 eggs and 1 1/2 cups of water and beat with a mixer for 2 minutes on medium.Once smooth, pour into a rectangular, greased and floured baking dish or aluminum tray.
Bake in a preheated oven at 350 for 30 minutes or until golden brown.
When you have 5-7 minutes left for the cake to bake, start making the crumbs as follows:
Combine 2 cups of flour, 1/2 cup of sugar, 2 teaspoons of cinnamon, 1 1/2 teaspoons of vanilla extract
Melt 2 sticks of butter and add to prior mixture.
**Crumbs form best when mixed with your hands!
Once the cake is done in the oven, sprinkle the crumb mixture over the entire surface and place back in the oven for another 7-10 minutes.
When that is complete, let it cool, and sprinkle the top with powdered sugar!

This is a huge hit for any family party. I usually will bring this to Danny's family during our summer beach week and it goes VERY quickly. We would bring it to Danny's parents this weekend, but there is only 2 pieces left and something tells me it will be gone ASAP.

My fam makes Eclair Dessert (w/ vanilla pudding, graham crackers, and chocolate) that is so light and delicious and also a bunch of impossible-to-resist cookies. No dessert made by the family will go untouched :)

My mom makes a traditional German plum kuchen that is loaded with buttery crumbs on top. She often makes a couple trays so I'm able to freeze some. I love it for breakfast. Mmmmm.

My go-to dessert is ALWAYS peanut butter temptation cookies-- they disappear quickly! And if someone requests cake, then I make a mean strawberry cake with almond buttercream frosting. ;)

dang. not vegan and not GF but it looks amazing! I make a raw vegan apple crumble that ive posted before that is my vegan gf way to eat things like this :)

mmmm.. Crumb cake. Sounds yummy. My mom makes these really good blondie brownies that aren't burnt. She DID make "snickermuffins" (snickerdoodles gone awry) once.

The last time I had a crumb cake it was an Entenmann's, which was about 15 years ago, but with our without the new photos, this looks delicious! I think I am going to have to revisit crumb cake!
