Happy Monday! It is happy because every day I go to work, it's closer to summer vacation! This is me staying positive throughout the remainder of the school year. Is it working? haha :)
I didn't get a chance to post last night or this morning so I figured, better late than never right? I'm so glad you all liked reading about Michael Pollan's book, In Defense of Food. Definitely a good book to pick up if you are in the market for a new one!
We had a very relaxing weekend, besides the hours we spent cleaning. We really didn't do anything that strenuous, which was nice because this was the first weekend in 4 weeks we weren't flying/driving/traveling somewhere. Saturday I did some baking in the morning and then we made some visits to my family. When we got home we cleaned and make our apartment sparkle. Why does it take hours to clean perfectly and minutes to make a mess? I'm so good at making the kitchen look like a disaster. Remember this? This is weekly, if not daily.
yep..this happens...often.
I also have been using my juicer like crazy. I finally bought some ginger this weekend so I gave it a try yesterday. My new favorite juice is a handful of spinach, 1 apple, 1/2 orange, 2 carrots and a little piece of ginger! Yum! Thank you to those who recommended buying ginger! Next up is beets. Any other good suggestions?
Sunday we had an awesome day and drove into the city and found a great parking spot. We went for a nice leisurely run in Central Park. We ran pretty slow so we could comfortably talk the whole time. After we ran we went to lunch at this sandwich place called Gina's on 82nd and 2nd. It was delish! I love walking around the city and going in and out of shops. Bloomingdales was having a huge sale so I couldn't pass that up! 20% off, plus $25 off, how can you go wrong? Danny treated me to some shoes and some clothes at JCREW after Bloomingdales. It was a glorious day! :)
When we got home I had a slight fail. I have been working with millet flour, but I need some tips. I'll be posting about my trials and mostly errors later in the week. What I really want to post today is slightly life changing. I saw these from Angela at Oh She Glows a couple of days ago and new I had to try. I've been getting lots of potatoes in our organic delivery so I had to use them up. (Side note: organic potatoes do NOT last even 1/10 of the time conventional potatoes do!)

toss it all around so it is well coated
Nut Butter Fries
brought to you by: Oh She Glows
1 tablespoon almond butter
2 tablespoons peanut butter
1 tablespoon olive oil
1 tsp salt ( I like a lot of salt, feel free to use 1/2 tsp)
Preheat oven to 400 degrees. Cut up potatoes into thin slices. (I used 2 small white potatoes and 2 small sweet potatoes and had some leftover for 2 people.) Put ingredients in the bottom of a large bowl (think pyrex). Put potatoes in the bowl and toss around either with tongs or hands until they are all well coated. Place on a non-stick cookie sheet for about 40-50 minutes or until crispy.
You will have to really control yourself to not eat ALL of them!
I had my nut butter fries with spaghetti squash, chickpeas and roasted broccoli.
Yum, these were basically my entire dinner tonight. They were so good and obviously the nut butter adds welcomed protein to my dinner! Danny had some chicken that I will share tomorrow.

Nicole! Try broccoli stems and kale stems. I juiced them last week and they were delicious!! I almost made these fries but decided on a different option.I WILL have to make these soon!
Well, thankfully since I started blogging almost a year ago (wow!) my life (or breakfasts) have changed by adding so many new things to my oats! :)
