After having my 2 cups of coffee I woke Danny up to go for a run. We went for about a 5 mile run in Flushing Meadow Park, where the U.S. Open is (and where the World's Fair used to be). It is really nice, but it could be nicer. I hate it when you are running and you see trash lining lakes and bodies of water. The path is also pretty beat up and flooded still from all of the rain we got. We did have a nice run though, best one I've had since I took a little over a week off from running while we were in Costa Rica. That was a much needed rest from running and got me excited to go back to working out when I got home. Usually I have a tentative workout plan when I go away, which I did (yoga and running) but running just didn't work out. I just kind of went with it and didn't stress and I'm glad I took the time off. It's nice for a reset every once in awhile and I haven't took a break from running in a long time.
Anyways, I did a LOT today, so I'm just going to go through it and then I'll post some recipes during the week.
When we got home from errands, I planted basil seeds. No clue if we did it right...but we hope we did.
Shared an acai and other mixed berry smoothie with Danny (1/2 gone...)
Made Averie's Raw Chocolate Chip Cookie Dough Balls
Also whipped up some hummus to snack on for lunch and during the week
Chopped up all of my veges for my lunch, much more unpictured items were cut up. (like avocado, cherry tomatoes, zucchini, etc)
Made more chocolate chip scones
Cooked chicken rolls for Danny for dinner last night and lunch during the week
and dinner for me... imagine I wasn't THAT hungry for dinner considering I ate everything I made for the 4 hours I spent baking and cookies. Ya have to taste test right??

Anyways, my newest recipe I tried was the raw chocolate chip cookie dough balls from Averie. They are great, Danny loves them too. They taste JUST like cookie dough!
Since I don't have a Vitamix I soaked the cashews a couple of hours before I made them.
cashews and oats combined into almost a flour
rolled into balls
voila! I did freeze them for a little while to make them more solid!
2/3 cup cashews
1/3 cup oats
2 tbsp agave nectar
1 tbsp maple syrup
1 tsp vanilla extract
1/4 cup dark chocolate chips
1 tbsp chia seeds
Mix cashews and oats together in food processor (or vitamix if you have one) until it becomes like a flour, place it in a bowl. Add the agave, maple syrup, vanilla and chia seeds and mix together in the bowl. Add chocolate chips and roll into balls. I like to spray my hands with non stick spray so it makes it easier to roll into balls. Then place them on a cookie sheet and put them in the freezer for about 15-20 minutes. (You don't have to do this, but I feel like they become more solid after I froze them.)
I am off to try yoga at the gym. It's my first official class since coming back from Costa Rica. I don't think it will beat the ashram they had at Los Altos, but I'm hoping it will still be good!

You are a cooking machine...that is totally impressive. My kitchen has about as much counter space as yours so I totally get the chaos when making more than 1 item.
I have a weird thing about open drawers and cupboards though...I HAVE to close them...even if I'm in somebody elses house...it drives me mad. I'm sure this is a sign of impending mental decline or something...
Hey it looks like you enjoy cooking as uch as I do! I have thought of taking a picture of how crazy my kitchen looks after a cooking frenazy. Kudos to you!

Wow, that picture says just how busy you were in the kitchen!! I love days like that though, I always feel like I've accomplished a lot!

A cooking marathon, looks like Christmas in my kitchen except you are a bit neater. I usually have more stuff on the floor ;) Those cookie dough balls look heavenly.
