Strawberry (I Hope You're Not Sick of) Scones

Good morning! and it is a good morning because the sun is shining and my coffee is brewing, how can you not love that?

Yesterday I had some exciting news...take a look....

My basil seeds finally sprouted! I literally was clapping and jumping when I saw them in there. They are so tiny but I am so proud that my husband I remembered to water them so they grew! I wish I could start an entire garden but my window sill just won't have it. 

Yesterday I also went for a nice walk outside. I was a little nervous because the sky was pretty dark and I didn't want to be too far if it started to rain so it was a short 20 minute walk. When I came back up to my apartment I decided to check out a yogadownload class, yoga with weights.  It was haaarddddd. And  by weights, let me clarify and say they were 3 (yes 3) pound weights and I wish I used 2, or 1.  My arms are definitely a bit sore today and so is my core.  

It was a great class. They have 3 different lengths, I did the 30 minute class. The weights help you get more grounded in poses and go deeper in down dog. Try it, it's awesome. (Oh, by the way, I DO pay for this with my own money, I'm not sponsored or anything...I just really like them...) I also liked it because it was quick and it gave me basically almost a full body workout, especially working triceps and biceps. 

On another note over the weekend I did some baking. It can be a hard job to keep up with Danny's appetite. I'm always busy making something because if there's nothing to eat that's good it results in spending money and probably not eating something as good (in taste and in health).  So I try to make different types of muffins, bars, scones, etc. 

This weekend I didn't have many interesting ingredients, and I couldn't find the pumpkin. After looking in the freezer to size up what baked goods I did had, I saw the frozen strawberries. I thought to add them to the scones and I'm glad I did!

Another type of scone:

Strawberry Chocolate Scones

Ingredients:
1 cup whole wheat flour
1 cup oat flour
1/4 cup Turbinado sugar
1/2 tsp sea salt
1/2 tsp baking powder
2 tsp baking soda
1/4 cup plain greek 0% yogurt 
2 1/2 tbsp 1% milk (or whatever you have)
1 tsp vanilla extract
1/2 cup applesauce (generous 1/2 cup) I used unsweetened organic applesauce
1 cup frozen strawberries, defrosted and cut into pieces (or mashed)
1/4 cup dark chocolate chips
1 tsp milk to brush scones
1 tsp sugar (for top of scones)

Preheat oven to 375 degrees. In a large bowl combine flours, sugar and salt. Stir in baking power and baking soda.  Add applesauce. Then stir in yogurt, milk and vanilla. Add the strawberries. Stir. Add chocolate chips. Stir until dough is thick. Spray a 9 inch cake pan with non stick spray. Spoon the batter into the cake pan and spread it out evenly. Lightly brush the top of the scones with milk and sprinkle it with sugar. Bake for 20 minutes until tops are lightly browned. Let cool in pan on the top of a cooling rack for about ten minutes. Use a pizza cutter to cut into 12 pieces. Remove from pan and let cool. 

*I LOVE using this metal round pan because it makes it so much easier to bake and shape the scones. There is no extra flour used and it's a quick clean up!

You're right - I DO want one of those right now, haha. Your scones always look divine :)
We're growing basil, too! And chives - and I forget what else. Last night my mom & I were just watching TV and she jumps up, exclaiming "LOOK!! My Basil is sprouting!!!!" all excited...then she examined closer, and in a voice of defeat goes "...oh. I guess it's just grass."
haha :P Although, looking at the planters from here, I think I definitely see some baby basils :)
p.s. glad I got you to purchase some Barley to try! Can't wait to see how it goes :)

YUM! Those look delicious! I love making things easier to clean up!!! Congratulations on the buds. That is so exciting. We are going to do a little raised garden, but time is slipping away. We have been so busy. Hopefully we will get it done soon. Have a great day!

Is that thai purple basil? I totally get the excitement of seeing something sprout. Every morning I get up and check on my 'babies' first thing...then I check on my children. ;)

I think I could eat that in one sitting ... NO I don't think I know!!

The bugs ate my basil last year ... this year the basil is growing in planters...hopefully they will survive the bugs.

SCONES! I honestly think they're one of my favorite pastries/dessert. There's nothing like the *texture* of a scone, and those babies look absolutely phenom!

Last year I planted peppers that failed miserably and tomatoes that wouldn't stop growing. Since I live in a townhouse that lacks in adequate sunshine in my backyard, I'm resorting to pots this year. LOTS of fresh herbs and lettuce in big pots on my deck :o)

Your scones look lovely. Nice and moist - love that it's healthy :o)
