Good morning! Ahh...back to work after a wonderfully long, beautiful weekend. We enjoyed ourselves down in NJ in the sun and sand. Friday was pretty cold down at the beach, but it didn't stop us from sitting there in sweatshirts and blankets just to be out in the warmth of the sun. Friday morning Danny and I went for a nice long walk on the beach which was very relaxing. We always make the best plans for our life when we are walking and running.
Saturday was gorgeous. From the minute I woke up the sun was streaming through the windows like crazy.
I wanted to go back to the beach for our workout so we did intervals so we wouldn't be completely dead when we were done. I had a stop watch so we did 2 minutes running, 30 seconds going a little faster, 1 minute walking. We did that somewhere between 10-12 times, with a 5 minute warm up and cool down. It was a great workout because the walking really breaks it up. After a day of sitting on the beach, I went back to the house and marinated tuna and some veggies. I wish I took pictures, but honestly I didn't even think of it! (I know bad blogger!) For dessert we had Hoffman's ice cream cake and frozen yogurt and my sister in law made an unbelievable apple tart. (Any of your NJ'ers know Hoffmans?? You must.)
I hated to leave yesterday, but obviously we didn't have a choice. I am a bit crazed on Sundays (my in-laws can attest to that...) and wanted to get back early so I could make lunch and go food shopping and put away all our laundry. It's just better for me to leave early, even though I missed the sun, than to have less time to plan. I feel like my whole week is thrown off when I don't get everything in order on Sundays. Am I alone on that one??
I thought I grabbed everything but we left a couple of things...including...my camera cord!!! I am so bummed but Danny thinks he has one at work. I had a great post planned with Jessica @ How Sweet Eat's Peanut Butter Brownies, but I can't post it without the pics! I'm going to try and post it later.
On the ride home we stopped and got iced coffees and some sandwiches. They messed up my order so I ended up bringing it back and just getting my money back because the wait was so long. I did have a gnu bar to snack on, so that held me over (the trip was only 2 hours).
Gnu bar is pretty new to me, I've had a couple of them at this point and wanted to wait to write about them until I tried a couple more. I like that the ingredient list is short, I know every ingredient on that list AND there is no soy in them. (Soy is okay, but I don't like to eat a TON of it!) They also don't have as many calories as Larabars or Raw Revolution or Cliff Bars, so I like that too. Even though they have 12 grams of fiber, I don't really find them that filling. They are good for an hour or so, but that's really it. My favorite bar is the banana walnut and cinnamon raison so far. Least favorite would be the peanut butter. I don't know why because I normally LOVEEE peanut butter, but I just wasn't feeling this one. Overall, it's a good snack for 130 calories, 4g of protein and 12g of fiber.
Okay I'm off to do Fitnessista's new Iron Pumping plan and maybe some yoga before work if I can squeeze it in! Hopefully I'll be back later with a great brownie post WITH pictures!
I signed up for the Healthy Kidney 10K in NYC on May 15! Are any other NY'ers doing it?? Anyone signed up for any other races??

Wow - gorgeous photos, sounds like you guys had an amazing time, too. You deserved it :) Hopefully the rest of your school year will go smoothly!
And I agree - I feel so thrown off if I don't get at least one "no plans" day on the weekend, even if I am busy doing "me" stuff throughout most of it!
And I ditto every word on the Gnu bars! PB didn't do it for me, either :\ I haven't had one lately because I opt for a little bit more calorie-wise for my afternoon bar - I've been hungry lately! haha. That and...well, 12g of fiber is pretty serious - so I make sure I'm not having a fruit & veggie-packed day when I have one :P Still love them, though - tasty!
I am so jealous...I need a beach weekend with my husband. We are always so refreshed when we get away for a little while! It looks beautiful there! I hate it when I leave things behind that keep me from doing things I want/need to do! Hopefully you guys have another cord! I will grab some of those bars. They sound like a good snack. I am SO with you on the getting home early on Sunday thing - it throws off my whole week if I don't get organized on Sunday!!
I agree with the Gnu Bars...I like them okay but they never seem to fill me up either...even with 12g of Fiber!

I'm the same as you on a Sunday - the week feels frazzled if I don't have everything sorted and ready to go on Monday mornings.
I haven't seen Gnu bars here...will have to keep an eye out for them.

Thanks so much for the brownie! It was def the highlight of my day. It was by far the best brownie that I have ever eaten and I've eaten alot. I can't wait to make them!

sorry that you're camaera-less. then again, i think it's actually great! we are such slaves to our cams as bloggers and it's nice to not have one. i purposely only took a few pics on my san diego day trip and it was glorious!
i just came back from a long weekend too. it felt so good. your pics are gorgeous and it sounds like a great time for sure. I cannot wait until summer! when are you out? i have until june 17!
i'm a fan of gnu bars! they're good in between meals and sometimes as a light dessert.
