Morning! 6 weeks of school left as of today. Honestly, where does time go? I'm SO NOT complaining, but doesn't it seem like I was just counting down 6 weeks until Costa Rica? I am looking forward to taking time this summer to relax, spend time with family and friends and to do some new things. I have to write down some goals to set for the summer; I have some in mind already, I just need to get it down on paper. (Does anyone else make 90 lists a week??)
Yesterday was a super relaxing day. I was up by 7:00 and it is the first day I have felt rested in over a week. I woke up literally with a smile on my face, which hasn't happened since last week. I sat on the couch for awhile with my 2 cups of coffee and caught up on blogs. I even had my VERY FIRST breakfast cookie inspired and based on cookies by Gina @ Fitnessista.com.
My bfast cookie had 1/2 cup oats, peanut butter, a handful goji berries, handful cacao nibs, 1 tsp chia seeds and a handful of sliced almonds...oh and a scoop of plain greek yogurt with some agave on top.
WHY HAVE I WAITED SO LONG FOR THIS??
We went for a walk to CVS where I bought out the store and then stopped at one of the local vegetable stores. I really, really need to go to these places more often. They just have the coolest produce and items there. I was good and didn't get too many extra things.
After we got home from our walk I just had a mad craving for guacamole. I headed to the fridge, found 1/2 an avocado and went to work.
avocado, tomatoes, red onion and peas mashed up.
add in some greek yogurt
1/2 avocado
1/3 cup early peas
1/4 cup plain 0% Greek yogurt
2 cloves garlic, minced
1/2 tomato, chopped
1 T lemon juice
about 1 T red onion, chopped small (I used about 1/8 of a HUGE red onion)
salt and pepper to taste
Mash up the avocado and the peas in a medium size bowl. If you have a mortar you can use that, otherwise just use a fork and mash it until it all blends together. You can also use a food processor if you like it creamy. Add in the tomato, red onion and garlic, mix well. Then add in the greek yogurt and lemon juice. Depending on your taste add in salt and pepper, starting with 1/4 tsp pepper, 1/2 tsp sea salt. Add more according to your taste buds! Cut up some carrots and eat with some chips or crackers!

*ANOTHER NOTE: You cannot taste the peas in this guacamole. Danny had NO clue. It really bulks up the guacamole without changing the taste or eating an entire avocado. This was enough for one hungry person (me) or two people who want a snack.

Yay for 6 weeks!!! Since starting college it seems like grade/high schools go SO late into the year. Don't know how I did it :P
While I was reading your guac recipe I got all excited at the peas, thinking "Oh, I love peas - maybe I'd like this guacamole!" (since I'm not an avocado fan.) and then read that you can't taste the peas :( ahhh, well.

My hubs loves guac but hates peas. This would be interesting for me to make. I love to eat dip with either pea pods or my homemade whole wheat tortilla chips! Yum!
My kids are out of school in 1 1/2 weeks...I don't know if I am quite ready for summer! Although, once summer is over...I am sad to see them go. I love veggies for dip. I want to try those crackers...I need to get some when I go to the store next time. I don't know what I have been waiting for. Have a great day!

i am no doubt a guac-a-holic. I will DEFINATELY try that recipe. I can seriously inhale two avocados when I make guacamole, which is obviously no ideal ;)

i love mary's crack. for me as a GF soylight Vegan, they are the only thing that's affordable and readily available without a ton of salt, garlic, etc
some of the "raw foods" specialyt crackers are loaded w/ salt or garlic and are super $$
and i always make my guac with other veggies, it bulks it and adds fiber and more texture which i love. guac in a food proc is called baby food. thank god you like it hand mashed, me too!
The goji berries look like a great addition to your breakfast cookie. What else do you put them in?
I have heard of people putting peas in there guac, but have never seen a recipe for it. It looks great! I love fresh breads with almost any kind of dips, they just make it so tasty!

I could totally live off of guacamole. I'm notorious for ordering it as my meal and eating it with a spoon. I really like the peas and greek yogurt added in for something new and exciting. I'm going to try this :)
