After work yesterday I had a bunch of errands to run, which included iced coffee with a pal, going to the bank, meeting my mom for a manicure and going to the chiropractor. Danny and I went out to dinner too at one of our favorite sandwich places in Rockville Centre, Press 195.
They have the most gigantic salads…I never think I’ll finish them…but clearly I always do.
People ask me often how I eat the same lunch over and over again. I have to be honest, I don’t get bored easily with food. I like to eat the same things everyday, because that’s how much I like them. So, with my salads, they are always the same for the week, but week to week I do vary the toppings. This week I decided to make a bean stir fry to go right on top of my salads (along with everything else I put on them already).
Ingredients In a large saute pan add the garlic and stock and lightly brown. When broth is simmering add the beans over a medium-low flame. Stir it and then let sit for 5 minutes. Add the sea salt, basil and black pepper and stir again. Let simmer for 10 minutes. Serve over a bed of lettuce or pasta and garnish with fresh basil.
or pasta…with some olives and mozzarella added.

99% of the time I make my own lunch. I always bring a fresh salad and then something either from dinner the night before or a sandwich. It varies and while I used to enjoy eating the same thing every day, now I definitely enjoy variety!
I usually make a big batch of something for the week, and eat the same thing for lunch all week. The people at work always ask me how I don’t get bored, but if I make something I love eating, I don’t mind having it a few times. Week to week my lunches are very varied, so I think that helps too.

I eat a turkey wrap and grapes on the side for lunch everyday. I don’t get sick of it…I look forward to it actually haha!

I ususally bring my own lunch, but have been so busy lately that making lunches is not a TOP priority like it used to be so I’ll usually schedule a day or two to go out and grab a salad or some Indian food.
I am the same way, I don’t really get bored with foods like that. I vary the toppings on my salads, but yeah, they’re still salads for lunch…every day. This looks delicious! I hope you have a great day Nicole!
I bring salads for lunch every day. It’s so easy to switch them up with different toppings.. plus I’m reluctant to try something totally different because I’m not sure if it will keep me full for the rest of the day! Getting hungry before the day is over is a big nightmare for me!
