Hi! Welcome to my little blog, Making Good Choices. My name is Nicole and I have a passion for cooking, baking, eating, running, yoga, etc, you get the picture. I am a Health & Nutrition Counselor that helps people live a healthier, happier life. I used to be a 4th grade special education teacher in NYC, but after 5 years, I realized that wasn’t for me anymore. Luckily, I had the opportunity to study at Integrative Nutrition and now am very happily in my 2nd career.
I spend my days as an at home working mom; taking care of my daughter Olivia and also baking, cooking, blogging and working out. With my clients I do a variety of things that include introducing them to new foods, recipes & even cooking or baking with them. I also have a healthy online bakery called Blissful Eats that runs along side my health counseling. If you mention you’re a reader, you just may get a secret surprise in your order! I’m also proud to be a FitFluential Ambassador.
After the craziness of that school year, I really forgot how much I really had a passion for cooking, baking and just, over all, living a healthy life. Yes, I always tried to incorporate healthy living/eating/working out into my everyday life but it was on auto-pilot. After having time off I realized how much I LOVE all of those things and being able to share it with others, which is where the blog was born. While it is a big undertaking to blog everyday, I find it to be a huge stress reliever and release and also a great way of communicating with other people who enjoy the same things! I have learned SO much from reading other blogs and have expanded my repertoire of foods.
I eat a well balanced plant based diet. I don’t say no to any food because I believe everything has it’s place. I believe that eating well has to be healthy AND taste good.
As for exercise I enjoy running, lifting weights, yoga, taking classes and basically anything that gets me moving. From time to time, I enjoy racing, but for now I’m just enjoying actually running injury free.
I found out I was pregnant in Feb. 2012 and had a pretty easy pregnancy. I stayed fit and healthy up until the end, enjoying running (which eventually went to walking around 35 weeks), some light weight lifting and lots and lots of walking. My newest and most important role started October 20th, when my daughter Olivia was born (Birth story part 1, part 2 and part 3.). Our life was forever changed in the best way. I also now blog about my experiences as a mom. It has quickly become one of my favorite things about this blog.
