Good morning! Today Danny and I (and a bunch of my friends) started a ten day cleanse. We are avoiding grains, dairy, soy, beans and sugar. I started out wanting to do this because after Easter, I felt like crap. I told Danny about it and he jumped on it. He gets some joint pain and wanted to see how it helps him. (His father has RA, so he gets tested yearly to make sure he doesn’t have it…we’re just mindful and he generally is GF because he feels the best when he stays away from it.)

After a couple of days obviously I felt better from Easter and I kind of was like ehh, why am I going to do this? But I still have some eczema/rashes and flare up occasionally, sometimes multiple times a day, so I want to see if there is any correlation between food and my flare ups. (Note: I have been taking a prescription anti-histamine every other day for two months, but I stopped taking it Thursday and really don’t want to go back on it.)

I prepped some food yesterday. Mainly, chia pudding and muffins. The muffins are mostly for Danny so he has something he can snack on during the week, besides nuts. They are grain free, dairy free and soy free. They have date syrup in it, which acts as a sweetener but as far as I’m concerned it directly from a whole food, so it’s fine.

Good morning!

I feel like I just came back from a vacation…or a staycation I should say I guess? Danny had off Friday and Monday so we spent the weekend doing last minute baby things, cleaning up and baking A LOT. Our house is pretty straigtened and organized, so besides doing last minute things that get done often (like clean kitchen & bathroom) we are all set for baby. My form of nesting is apparentely baking.

After Danny and I went to Buy Buy Baby to buy our stroller, we stopped at Trader Joe’s to pick up supplies to make muffins and cookies. Muffins were basically last on my list for pre-baby baking. Funny because I woke up this morning and just had to make apple streusel oat squares AND granola oat bars. Maybe we can bribe people to babysit if we offer them muffins & cookies?

Our final list of things we baked over the weekend is…..

Apple Pie Muffins

Spiced Pumpkin Muffins

Peanut Butter Chocolate Chip Muffins

Oatmeal Chocolate Chip Cookies

Apple Streusel Oat Squares (I made it with spelt flour and real butter)

Blueberry Chocolate Chip Oat Bars

I *think* I’m done now. But then again, who the heck knows when this baby is coming. Last week I would have thought I would have had her/him already, but this weekend left me feeling really good…so maybe I have awhile? I think not knowing when labor is beginning is harder than not knowing if the baby is a boy or girl at this point!

Now that I’ve baked 2 things and eaten them I’m off for a walk and to decorate for Halloween!

Morning! Apparently I needed a lot of sleep last night because I slept until almost 8 this morning. I didn’t get too much sleep this weekend, so it’s probably why I slept so late. I have a new rule for myself that I’m allowed to sleep as much as I want until baby comes…because we all know what happens after baby. I also shower for as long as I want. And I don’t feel bad…at all.

This weekend we had a wedding in Newport on Friday night. It was absolutely gorgeous and I’m so happy for my friends Nat and Tim. Congrats to them! I’ll share some pictures at the end of my post!

Sunday when I woke up (and remembered that Danny ate ALL my eggs the night before) I decided to make some muffins. I can’t decide if I’m nesting or if I’m just hungry, but I also made chicken salad and turkey veggie chili. (My biggest problem with freezing food is that I think it will all be eaten by the time baby comes….?)

Anyway, the muffins I made turned out awesome and I was glad to have a muffin that wasn’t fillled with chocolate for a change. Now I need to make about 3 dozen of these so they actually last for post baby.

What are your favorite meals to freeze? I’m looking for suggestions of things to make. So far I’m thinking soup and chili…but I got good advice from Michelle on not making them bean heavy.

Yesterday I was taunted with some cans of pumpkin. You may be wondering where I got some canned pumpkin so early in the season, but don’t fear. I stocked up so much last year in fear that I’d run out. Well, I didn’t run out, because I didn’t use it because I was afraid I’d run out. Crazy? I know. Certainly not the only crazy in my life.

When I woke up this morning, I decided I NEEDED pumpkin chocolate chip muffins in my life. So approximately 30 minutes later, there they were.

And then this happened.

burned.

Don’t pick up a muffin pan that has just come out of the oven. Not smart.

I’ve posted this recipe a couple of times. Each time I tweak it and make it better. Better as in using Enjoy Life Megachunks. Who doesn’t want chunks of chocolate in their muffins? Exactly.

*To make 1 flax egg combine 1 tbsp ground flax with 2 tbsp water and stir. Let sit for 5 minutes.

1.5 muffins with a lot of almond butter. yum.

I know that this is just the start of pumpkin around the blogosphere, but really, these are so satisfying, make them! Or better yet, come to Breathe and Flow yoga tomorrow and taste some with Pure Bliss Eats!

Off to do more baking, workout and go out to dinner for my sister’s birthday!! Happy Birthday Chris!
