Hello! I hope all of your weekends were as fun and restful as mine was. We had a very busy weekend filled with good things.
Weekend Recap:
Friday night we went to a family party with some of my cousins and had a great time. We definitely need to get together more often. Has anyone else seen Rockband and been amazed by it? (or am I the last one on earth to see it…?) Most of the night was spent eating and playing that…I let everyone else give it a try.
I made some fun things for the party, like traditional hummus and roasted red pepper and olive hummus. I also made the world’s best chocolate chip cookies (that had a little malfunction, but they were still okay.) My sister made layer taco dip which was really really good…maybe I should get her to guest post that.
Saturday we slept in a little bit and then went to the gym where I did a new treadmill workout based on a workout I found on Fitnessista.com. (Hopefully I’ll get to posting that as well.) After that we went into the city because Danny had a meeting for a possible new business venture and I treated myself to some of my favorite things, a pedicure, coffee, sushi and some fab company.
Sunday after making our visits to my Grandma and Aunt’s house, Mom’s house and Stop and Shop we came home and made some dinner. Aunt Millie hooked us up with some meatball soup so we made that. In the meantime while that was heating up I used some of my new gadgets I received for Christmas:
I crinkled cut my butternut squash to make awesome fries.
I misted some olive oil, sea salt and pepper on top and put it in the oven at 400 degrees for about 15 minutes on each side.
I used my spiralizer to make “spaghetti” out of zucchini!
How cool is that???? This will also cut slices instead of think strands.
I just wanted to show how long the strands come out!
You would swear you were eating pasta if you didn’t know. I put it at the bottom of my soup and then put a ton of grated cheese on it when I got to the bottom.
The last thing I did was a bit sneaky when I cooked this past week. I had a couple extra pieces of kale I needed to use up before it went bad. I was making chicken sausage and I knew if I threw it in in pieces Danny wouldn’t eat it….so I stuck it in the food processor and bam! You’d never know there was kale in it. I’m so sneaky.

So those are my new kitchen gadgets! I also made my own granola this morning but I’ll be posting that tomorrow!
