Tonight I have Parent Teacher Conferences, so I will be a zombie by the time I get home. I will get to meet with 20 parents tonight. WOOHOO? Thank goodness I got a workout in this morning, because otherwise it does not happen on these days.
Over the weekend I had lots of plans to bake a couple different things, I only got to making english muffins and these brownies.
I saw these brownies over at Brown Eyed Baker and had to make them. We usually just make brownies from a box, since they are super easy, but I am always looking for a way to avoid buying things from a box. After searching my pantry, I didn’t have all of the ingredients, so I had to improvise, and obviously my improvisations turned out well because Danny’s eaten about 10 brownies at this point. I imagine these are really good, but I can’t eat them since I gave up white flour for Lent. Danny did tell me how good they would be over my ice cream though.
- 1/3 cup Dutch-processed cocoa
- ½ cup plus 2 Tablespoons boiling water
- 2 ounces dark chocolate, finely chopped (I used 72% cacao)
- 4 tablespoons (½ stick) unsalted butter, melted
- ½ cup plus 2 Tablespoons vegetable oil
- 2 large eggs
- 2 large egg yolks
- 2 teaspoons vanilla extract
- 1 cup sugar
- 1 1/2 cups brown sugar
- 1¾ cups (8¾ ounces) all-purpose flour
- ¾ teaspoon salt
- 6 ounces dark chocolate chunks (I used whole foods 70% cacao)

oh these would be perfect with some old fashioned ice cream and hot fudge one of my favorite desserts! looks like I;ll be making some brownies this weekend oh yum~

I make my brownies out of a box I make them so much that its just easier I do doctor up the box recipe though

I love brownies, especially these! I could eat them daily, in lieu of dinner or breakfast. I made some recently with tahini and they came out delicious too.
