Peanut Butter Oatmeal Chocolate Chip Cookies

FRIDAYYY!!! Yes! It’s finally here! This week wasn’t that long, but I’m super happy that the last day of the NY state math exam is TODAY! 


Yesterday after taking my sweet time getting ready for work, I still managed to leave early. I have found the earlier I leave, the longer it takes me to get to work. I really don’t know how that happens, but it really doesn’t make me want to leave any earlier!


I got an email yesterday asking about my favorite kitchen gadgets. I figured, why not post about them?? 

My favorite gadgets have to be (in no particular order) the Joyce Chen spiralizer because it does that.

Then there is my crinkle cutter. I love it because it makes anything just like fries.

Some of my other favorite gadgets are my avocado slicer, my dressing emulstir and my immersion blender.  I love the soft serve it makes!



Moving on…


After I came home from work I updated my music with all new Glee songs so I would be motivated to run. I actually had a great run, especially compared to last Thursday’s which was TOUGH. I think it was the music that really got me going. Tell me I’m not the only one who has Glee on their ipod. 


When I finished that I got started on 2 batches of Peanut Butter Oatmeal Cookies from Michelle at Brown Eyed Baker. I needed a quick and easy cookie recipe to make for tomorrow. My students deserve some homemade cookies for how hard they have been working over the past couple of months. 


creamed butter, sugar, peanut butter and vanilla extract


Peanut Butter Oatmeal Chocolate Chip
from Brown Eyed Baker

1 cup all-purpose flour
1 teaspoon baking soda
¼ teaspoon salt
1 stick (½ cup) unsalted butter, at room temperature
½ cup creamy peanut butter
½ cup granulated sugar
1/3 cup light brown sugar (I used 1/2 cup by accident…a pretty good mistake!)
½ teaspoon vanilla extract
1 egg
½ cup rolled oats
1 cup semisweet chocolate chips
1. Preheat oven to 350 degrees F. 
2.. On medium speed, cream together the butter, peanut butter, granulated sugar, brown sugar and vanilla extract, about 3 minutes. Add the egg and beat to combine.Add the flour, baking soda and salt; set aside.Stir in the oats, and then the chocolate chips.
3.. Drop dough onto non stick baking sheets about 2 inches apart. Bake for 12-14 minutes, or until the cookies are lightly golden. Cool completely on the baking sheet.

I’m pretty sure these will be ALL gone tomorrow…considering Danny walked in the door, ate 3 and then ate dinner. I had to stop him from eating more so the people I made them for got some!

Those cookies look PERFECT!!! Bookmarked. I'm staying at my mom's over the next few weeks and plan on using her big and gorgeous kitchen to the fullest!

Also, how sweet are you bringing those to your students?? :)

Great looking cookies – think I'll make those soon but with peanut butter chips in them. You can never have enough peanut butter. Yum.

I think I'm the only person in the world who has not watched Glee…think I'll rent it this summer when things slow down and see what the fuss is about!

I start to think "gee I wish I had those appliances too" but I'm not sure I'd know how to use them or where to begin… is the avocado tool really that useful? I've seen them in stores but don't know if they're practical or a gimmick

Wish I was one of your students! Peanut butter cookies are my #1 favorite cookie. Your students won't know until much later in life what an impact you have made in their lives. Being rewarded for hard work it a much needed thing. The country needs more teachers like you. Have a wonderful weekend.

the cookies look PERFECT!
and your spiralizer makes slightly more "flat" and long noodles than round and curly. chen vs. the paderno. I can see it now, it's like two heavy weights squaring off :) i love seeing your noodles and how yours compare to mine.
