I love four day weeks, don’t they make the weekend come around so much faster? I am out at a workshop, getting trained in Wilson for 3 days so I really don’t feel like it’s a true school week. How is everyone else’s week going?
Yesterday, I woke up and did another killer leg workout with Chris Freytag. I really curse her every time (in the nicest way possible) I do this because it’s so hard. I am VERY thankful it’s only 20 minutes of torture. After work I stopped at the gym since I got out a little early from the workshop and did a quick 35 minutes on the elliptical. I like doing the hills program so I don’t have to think about anything. While I was on the elliptical I was watching Dr.Oz. I think it was a repeat but his show was about the top three dangers in your purse. Two out of the three didn’t really concern me, but one did.
The top 3 were: anti-wrinkle cream, lip gloss and mineral powder. I don’t use wrinkle cream and I rarely wear lip gloss, but I use Bare Minerals every single day. Dr. Oz says that the particles are so small they can get into your lungs and can lead to inflammation later in life. I don’t know if I’ll be changing my makeup any time soon, but I’m going to be more conscious when I apply…I’m not sure how, so if anyone has any ideas let me know. I LOVE Bare Minerals, so until I see a bit more research on that, I’m going to continue using it. To read more about the top 3 dangers click here.
Monday I got this amazing package in the mail! Jess from Healthy Exposures sent me these wonderful items because I shared some bars with her. I can’t wait to break into this food. I plan on trying those bars tomorrow. They are from a local shop near her, how lucky is she?

Now for a recipe. Back to my sunny weekend at the Jersey shore….
I hadn’t made or eaten skewers in forever, so like I said, when I saw it in Rachael Ray magazine, I was drooling over them and knew I had to make them.
Vegetable Skewers
- asparagus cut into 3 inch pieces
- different color peppers, cut into chunks
- red onion, cut into pieces
- green and yellow squash, cut into circles
- any other vegetable you want
Dressings/Marinades
Balsamic Marinade
- 1/4 cup balsamic vinegar
- 1/2 cup extra virgin olive oil
- 1 tablespoon honey
- sea salt and pepper
Combine all ingredients in a bowl. Stir together to emulsify. Brush the dressing over the skewers generously. (Feel free to sprinkle skewers with salt and pepper.) I also applied the dressing 3 times over a 30 minute period so they were well coated. Grill for about 15 minutes.
Parmesan Yogurt Dressing
1/2 cup plain greek yogurt
1/4 cup parmesan cheese
1 tablespoon dijon mustard
1 tsp lemon juice
1 garlic clove, minced
Combine all ingredients in a bowl. Brush onto skewers generously. Grill for 15 minutes (or however long your grill-master tells you to.)
Since you are only marinating vegetables, you can use these both as a dressing for salad or the skewers after they are cooked. Pick whichever marinade you want and go for it. You can also marinate the veggies in either one of these dressings beforehand, but I didn’t have that much forethought to do that. These dressings/marinades would be great with chicken or fish also on skewers. I really enjoyed the yogurt dressing with the vegetables and even used it on my salad the next day.

Way to pack in the veggies!! I love grilling veggies! The flavor is incredible! My favorite thing to grill is chicken! I know its boring, but I just love it on the grill! And salmon too

Oh yum, those veggie skewers look so good. ANd I don't wear minerals, but I sure do pile on some wrinkle cream! I have since I was 19, lol.
Will have to go read that article about the mineral powder, I dont wear it but just was recommended by a costmetologist to do so…now I need to research thanks for posting it diffinitely got my attention to seek the info…great skewers look wonderful!
I love veggie skewers!! Cooked on the grill..mm perfect! I like to add some fruit to mine for a little bit of sweetness!

I stopped using my gloss after I got a mole on my lower lip. I believe it is due to a huge usage of petrolatum based gloss.
You might want to try using a Dr. Hauschka. I know whole foods carries it, but I have been using it for the past 3 years. I turned to it when regular makeup was making me break out and I was getting eye infections from regular eye liner. So I changed to this line and I have NO COMPLAINTS. It is a german company and it is all herbal based. I love it.

My favorite thing to grill is definitely veggies! Bean burgers are a close second! Ugh, I guess we are all going to die of something, right? It is so frustrating to be concerned about everything. We should all just go back to the olden times where you pinch your cheeks for the color! I wish I had skin coloring that looked good with no makeup, but sadly that is not me! You have great coloring though! Oh, and I will post that buckwheat crust for the pizza recipe soon…I just have to type it in! Have a great day!

great veggies!!! I do love grilling veggies, and my wife loves them!! my wife was trained in wilson, then became a reading coach and just got her masters as a reading specialist….now with all the budget cuts shes going back into the classroom.. go figure….
my fave thing to grill would be burgers. there is something very satisfying about smooshing down the patties and having the fire spit back at you. but i rarely grill, and i almost never cook meat. where in jersey are you?! that's where i'm from, but i rarely went down the shore, even though everyone else i knew did.
Hmm…I am wearing all 3 of those items right now. I love Bare Minerals! Will have to do some research on that one.
