Granola Bars=Amazing Snacks!

Today is my one day in my week where I can actually relax. I’ve done nothing since 7 a.m. Well, that’s not true, I caught up on a ton of blogs, watched the TODAY show and made granola balls and raw chocolate balls. This weekend is my mom’s wedding, so I wanted to get some granola bars and balls going so I would have something to snack on. 


This week has been crazy with running around doing last minute things. Yesterday we went to pick up my sister and cousin’s dresses and they were MAJORLY messed up. We spent the majority of the day going back to the first lady, getting our money back and then going to a different place to get them fixed. We got our money back, but it is going to cost more money to fix the dresses then it would have been if we went with the original dress. Whatever, it will work out, it was just STRESSFUL!!!


Tomorrow we are getting our nails done and then Friday we are leaving bright and early to go out east and to head to some OUTLETS! My mom is getting married at the same place I got married (Giorgio’s in Baiting Hollow, NY) and I can’t wait to enjoy the food. What bride actually eats on their wedding day? All I had was calamari and cake. I didn’t eat until our after party because I was too excited. There was NO time! 


Today I am hanging out at my apartment until around 1, then I’m going to head into the city to take a Core Fusion Sport class at Exhale Spa. I’ve heard so much about Core Fusion from Dori and Missy that I had to try. The sport class is what fit my schedule, but I look forward to trying out Core Fusion and Core Fusion Open another time.


Since I always carry snacks with me, I wanted to make granola bars. Usually I make no bake granola bars, but since these won’t be in a fridge/freezer for the weekend I decided to bake them so they would stay better. (I don’t know if that’s true, but it was my thinking…)






Granola Bars
Ingredients


Base:
2 cups oats
1/4 cup peanut butter
1/4 cup almond butter
1/2 cup applesauce (I used organic unsweetened)
1 banana
1/4 cup agave nectar
1/2 cup puffed millet (or any cereal)

1 tsp cinnamon 
1 tsp vanilla extract



Optional Add-ins (I used all of these)
2 tbsp hemp 
2 tbsp chia seeds
1 scoop VEGA chocolate (protein)
1/4 cup goji berries
1/4 cup cacao nibs
1/4 cup dark chocolate chips
1/4 cup sliced almonds



Preheat oven to 350 degrees. Mix all of the base ingredients into a big bowl. Once combined well, add in all of the mix ins, one by one. Combine and mix well.  Spread out on a cookie sheet, canoe pan or anything else you’d like to use. Bake for 15 minutes and then let them cool on a cooling tray. Makes about 16 bars. 



These make for a perfect snack! I’m off to eat lunch and head into the city. We are meeting some friends who are in from Ireland (that we met in Costa Rica) for dinner.

Those look wonderful! I'll have to try some theme and variation of them! Also, I've never seen a pan in that shape before!

Ugh, I hate when you have to fix things that someone else messes up! Good luck getting everything together! The granola bars looks delicious!!! I love Core Fusion…have fun!

The granola looks delicious! Sorry to hear about the dressing mishap. My sister just got married earlier this July, so I know getting ready and everything the weeks before can be stressful! Sounds like you've got a great rest of the week planned though, have fun!

What kind of pan is that? Canoe pan? I've never seen anything like it! What else do you use it for?

I made these granola bars today – sooooo good! Thank you for the recipe! Now I just wish I had a fancy pan like that to make mine in!
