I’m in my most favorite spot on the couch and I just finished dinner. I had a pretty relaxing afternoon, I went to the food store to pick up a couple of things for juice and was on the lookout for pumpkin. I’ve seen it popping up all over the blog world, but I still can’t find Libby’s at the food store near me. I’ll have to look again at Trader Joe’s when I go Thursday or ask Danny to stop into the health food store by his work. Do they have canned pumpkin yet by you??
Danny had the dentist, so I wasn’t planning on cooking anything crazy. I had leftover baked tofu that I was going to have with some quinoa or something, but then when I opened the fridge the yucca I had was practically staring me down. It’s been in there for awhile and I didn’t want another fail so I’ve been waiting to make it. Tonight was the night.
They came out good, not great, but at least I could eat them this time. They still need a little tweaking, but they are worth making.
Ingredients Preheat oven to 400 degrees. Cut the peeled yucca root into slices. Lay on baking sheet and spray with olive oil. Sprinkle with sea salt, black pepper and cumin. Zest 1 lime over the yucca and then cut it in half and squeeze over fries. Bake for 15 minutes. Put oven on high broil and broil for additional 6 minutes. Keep a close eye over the fries. I’m so excited for Glee to start again tonight! It’s a big day for TV: Parenthood, Glee and Biggest Loser! Let me know if you try these yucca fries and make any changes!

I have never had yucca!! It’s another one of those “heard of it…what IS it?!” veggies for me, haha. I’ve got a rutabega to try…but I think maybe my next new veg to give a go will be yucca?!
We never ran out of canned pumpkin up here!! For a while we just had the Price Chopper brand, which honestly, was just as good as Libby’s. I saw now we’ve got Libby’s back and no P.Chop brand, though! haha. I was disappointed, because I’d rather spend less and get the P.Chop. I mean…pumpkin is pumpkiN!! (though I hear the organic canned pumpkin is weird?)

I haven’t looked for pumpkin yet, canned pumpkin….but saw real pumpkins at the farm down the road today, and it made me smile!
