What I learned about myself today:
1. I am just not cut out to work until 5:30.
2. I have no plans on waiting for my husband to eat dinner when I get home at 6. Sorry but I’m not sorry. (But I probably will cave and cook him dinner anyway….)
3. Keeping Up With The Kardashians is just about the level of intellectual stimulation I need when I’m this tired.
4. I really am a morning person and 6 o’clock is basically my bed time. I may be yawning and nodding off if you ask me to think anytime after 4, especially without my third cup of coffee.
5. My blog posts need to be shorter if they are going to be more consistent.
6. Dinner has to be simple and fast so it can get into my stomach asap.
Saute spinach and mushrooms in a small saute pan either in spray or olive oil. Meanwhile scramble eggwhites in a small bowl. Add milk, salt and pepper. After sautéing put spinach and mushrooms on a plate. Pour eggwhites into heated saute pan, on medium-low heat. After a minute or so, use a spatula around the sides of the egg to make sure it doesn’t stick. Place mushrooms and spinach back on top of eggs and fold over. Making Good Choices Blog

Egg white omelets are perfect for those kind of nights! You will get back into the swing of things…just give it some time. I am with you though, I have to eat dinner around 6pm otherwise forget it…I am a total grouch! Have a good night Nicole!

Those are some most excellent lessons to learn. I learned some similar ones today – back to school is HARD!

Okay, there’s no way that was the first time Kim had botox this week on the Kardashians.
I remember feeling like that when teaching too! Even now I’m beat at the end of the day and only want some mindless TV to stimulate me. I love shorter posts. I prefer writing them myself too.

you will get back into the old routine soon, i promise i believe you that the first days back are rough, though! i am usually the same way about dinner, though. when i’m not working, we eat at around 5…but days i work, i don’t get home until 6:30! i basically throw together dinner in ten-fifteen minutes. and eggs are always quick, delicious, and easy options I hope tomorrow is better!

I’m with you on the quick dinners thing. For some reason, my evening meal is not one I want to have to wait for!
Oooh, I love eggs for busy dinners! So satisfying!
