Morning! How rare is it I actually have time to post in the morning? I set my alarm for 6:30 and then decided to lay in bed for awhile. This week had been a sleep in week for me, with no early morning workouts. I needed to get some good sleep in this week since I didn’t this past weekend. I’ve just been working out after school, which has been fine. Next week I’ll go back to working out some in the mornings.
Yesterday I went from my hot classroom, to the gym, thinking I would have some relief, but no. There was NO air conditioner on and it was hot. I did 5 miles on the “dreadmill” and called it a day. It was a struggle because I haven’t ran on the treadmill in like 3 or 4 months but Oprah helped.
When I came home I wanted a quick dinner. I often make pancakes and/or eggs just for a quick lazy, healthy dinner. It’s great in a pinch. I wanted the idea of pancakes but something different, I had been concocting it in my head the whole day basically. I knew I wanted to use sweet potatoes, but I wasn’t sure how. This is what I came up with….
Ingredients Mash sweet potato well, if keeping skin on, making sure skin is broken up into small pieces. (You may want to throw it in the food processor.) Mix all ingredients into a large bowl and mix well. Spray a large frying pan with olive oil and heat on medium. Scoop the “pancake” mixture into the frying pan and cook about 4-5 minutes on the first side and then brown the other. Cook like regular pancakes. Enjoy with some butter or any other topping! Definitely pancakes, waffles and eggs! Those are my go to quick healthy dinners! I love pumpkin pancakes and I have been trying to sneak them in lately, but everyone else has been making other suggestions! I am going to just make what I want soon! Love it!! I have a ginormous sweet potato currently in my fridge and have been thinking of what to do with it. I have tomorrow morning off, which usually means pancakes for me So why not try these?!! I love sweet potato so much, I cant wait to try these babies!!
Btw, the Bob cardio is NOT all plyos. Its actually alot of squats and kettlebell moves like the swing, but with a dumbell instead. It is HARDCORE. and there is NO rest time!! So much fun though!
I so love breakfast for a quick, easy dinner. Sorry you had to run on the treadmill in heat. That must have been brutal.
I think sweet potatoes really are the easiest and most versatile when it comes to quick dinners. You can microwave one in just a few minutes and do just about anything with it from pancakes to topping it with black beans and salsa. I love my sweet taters
