I’m not one for the cold, but I do look forward to making some hot meals in the cold weather after eating tons of salads and raw foods over the hot summer months. There is something about coming home, putting on socks and sweatpants and eating a hot bowl of soup.
I don’t know about you, but my soup has to be HOT. Like burn the roof of your mouth hot. I will even reheat it to make it that hot again. Not a fan of the soup at the bottom of the bowl that gets cold. That traits runs in my family. My mom and Uncle Tommy always tells stories of my grandfather eating soup and sweating from it being so hot and they are the same way.
So throw together this soup, because it’s that simple. Take out a pot, some veggies and get this going. NOW, because it’s cold out.
In a large soup pot, brown garlic in olive oil on medium heat. When browned, pour chicken and vegetable broth in pot. Add vegetables and let cook on medium heat for 15-20 minutes until cooked through. Add soy sauce and let cook for another 5 minutes. Give the eggs or egg whites a good scramble and slowly pour into pot of soup while stirring the soup at the same time. Add salt and pepper to taste. Serve over brown or soup pasta.

I enjoyed this soup over brown rice with some Mary’s Gone Crackers Sticks and Twigs crumbled on top. *Mary’s sent me Sea Salt Sticks and Twigs a long time ago and I have been a horrible reviewer. They are one of my favorite snacks to eat on top of salads, with hummus or crumble on soups. They are gluten free and whole grain. They have an amazing crunch and take very similar to Mary’s Gone Cracker’s, but are crunchier and saltier. I eat them all the time, but haven’t formally reviewed them.
My biggest complaint about these are that I can never find them at Whole Foods. There is only one store, not that close to me that I can find them at, so Mary’s PLEASE make these more available. I’ve only found the curry Sticks and Twigs at Whole Foods and I’m not a fan of those.
I’m off to work and to get in 5 miles on the treadmill after work. I hope Ellen is good today!

I love any soup with eggs. I also can’t find Mary’s gone Crackers in my Whole Foods. I’ve heard so many good things about them so I’m bummed I can’t try them!
I always love soups and crockpot meals and things like that. I even eat them during the summer. I can’t go too long without them!

Yum! I don’t shop at Whole Foods, but I shop at Shaw’s and can find Marys there. Not sure if you have Shaw’s in your area.
I love the idea of making egg drop soup at home… because, really, who knows what’s int he kind you get at Chinese restaurants. Sounds great!
