This morning I got up and did Bob’s Pure Burn Super Strength. I’m just in love with those 67 minutes of torture. I’ve been pausing it less, but I still need to take breaks because it’s HARD.
Yesterday when I got home from the gym I decided to make a recipe I saw on Jess’s blog. I couldn’t decide if I should make this, this, or this, so I kind of combined the broccoli bean pie and the shepherd’s pie. Next time I plan on using 3 sweet potatoes because I only used 1.5 and I would have like a thicker crust. I literally could have eaten this entire thing, but I showed some restraint so Danny could have some AND I could save some to take a picture this morning. (Is it normal that I told Danny he couldn’t finish this dish so I could take a picture of it later…?)
Crust: Preheat oven to 400 degrees. In a medium sized bowl combine all ingredients. Mix well and then spread out in casserole dish. Bake for 30 minutes and then broil for 5. Filling: In a large saute pan heat the olive oil on medium heat. After 2-3 minutes add the mushrooms, zucchini, red pepper and saute. Let cook for 5 minutes and then add the spinach. After the spinach starts to wilt add the white beans and cranberries. Cook for 5 minutes until heated. Add water to the pan and mix. Slowly add the garbanzo bean flour and mix well. Let simmer for 3-5 minutes until it thickens. Season with salt and pepper. Spoon veggie mixture onto crust and bake for 30 minutes. Garnish with mozzarella cheese and even some balsamic vinegar! My mother in law makes an AMAZING Spinach Quiche…I have never make a dinner pie, never was really into them…but yours looks healthy and loaded with veggies and beans making it right up my alley!

I haven’t tried Bob’s strength dvd. The cardio almost put me on bed rest! The yoga isn’t too bad though.
