Danny came up with the title of this post. I had to ask him to explain it about ten times before I actually liked the idea. I still may have no idea why, but it means to change it up…like in football*….or so he tells me. *I had baseball written….he had to correct me again. Is it that funny Danny?
We had this really nice dinner planned for tonight. We planned it at about 9 am this morning…when we usually plan our dinners. Is that weird? I decided I was going to make pumpkin gnocchi because it’s been too long…like a year too long. It was decided. It was set.
Then I baked some apple pie muffins. and I baked pumpkin chocolate chip muffins. Oh yea, then there were the peanut butter chocolate chip cookies and um…my lunch for the week. After that I decided to do an hour and a half of yoga…because obviously I had the time. Then after a shower and a stop at my favorite coffee shop we did some laundry at my moms.
Our day wasn’t eventful enough when we went to visit my Aunt Millie (age 94) and she wasn’t home/answering her door/with any other family member/not at the stores she usually visits. Fast forward 2 hours later, many miles driven in the car, we were seconds away from breaking a window when she decided to wake up from her nap. Yep.
Two more loads of laundry at my mom’s later we were home and it was 6. Gnocchi has to wait. Pizza bites do not.
First, lightly toast chunks of bread. After toasted spoon tomato sauce over bread. Sprinkle basil, oregano, sea salt and black pepper over sauce. Top with mozzarella cheese and baked at 400 degrees until cheese is melted. Making Good Choices Blog
I made myself a (very random) salad to go with the pizza bites. It consisted of sunny side up egg, carrots, tomatoes and balsamic portobello mushrooms. Danny thought he was going to have them all to himself. He thought very wrong.
And that is how we called an audible.

Lol…I don’t get sports terms either…but the pizza bites + salad looks delicious!
That is one heck of a random salad! I wish I had all of that in my fridge right now for making that one! I hear ya on making plans for something and then the craziness hits! I am glad your aunt is ok though! Have a great day Nicole!
