The blogging comminuty is a truly special place. Through it we get to be a part of a group of people who really do support each other and despite some of the downfalls, make each other feel welcomed and loved. That is certainly how I felt after my last 2 posts. Thank you for all of the support and well wishes from the blogging community and of course, from my friends and family.
Yesterday I had a relaxing day off which I spent recovering from the half. I did some yoga, from which I thought I was cured…until an hour later when I went back to hobbling along. Then I went with my cousin to get a very long pedicure and manicure. So worth every penny.
For lunch I reheated some sweet potato leek soup I made. I found leeks at Trader Joe’s and figured I’d make a soup out of them. Most leek soups are filled with butter and cream, so I reduced the butter and left out the cream. Perfection.
Ingredients Melt butter on medium heat in a large soup pot. When melted add leeks and a heavy pinch of sea salt and let leeks sweat for 5 minutes. Lower the heat to medium low and let cook until the leeks are soft, for about 10 minutes. Add sweet potatoes and broth to the pot and let simmer until soft. Turn off the heat and use an immersion blender to puree the soup. Add sea salt and black pepper to taste.
This soup is quick and easy with a short ingredient list. I’m a big fan. It is pretty filling and even more so when eaten with some crackers.

I love leek soup! I’ve never had it with sweet potatoes though. Can’t wait to try this!
