Happy Friday all!
This week flew by for some reason and we are already 3 days into December. I feel like we all ask the same question of “how does this even happen??” All of the sudden it’s Christmas shopping, list making and cookie supply buying. I’m pretty psyched.
I have a strict Christmas music only rule in my car right now. Christmas music and the smell of balsamic vinegar that is. Oh wait did I not tell you how I spilled an entire container of salad dressing in my lunch bag and front seat of my car….. yeah.
I tried to clean it, but I still have been greeted to the smell of balsamic the last two days. A major car wash/clean is in the cards for my car this weekend.
Yesterday I took the day off from blogging because I haven’t made anything too exciting this week and the darkness (for pictures) is really annoying me. I wish I had room for a light box, but I don’t!
I did a solo spin class yesterday and then came home feeling like a shrimp dish. I took out chicken for Danny and shrimp for me and went to work.
Ingredients Saute garlic and red onion in olive oil on medium heat until garlic is browned. Add the raw chicken and lower the heat to a low flame. Cover and let cook for about 6 minutes, flipping halfway through. Then add diced tomatoes and 1 tbsp white wine vinegar. Let chicken cook through. When chicken is cooked add shrimp and mushrooms and remainder of white wine vinegar. Let cook for about 10 minutes, stirring occasionally. Add the spinach basil, oregano, red pepper and salt and pepper to taste. Let simmer for 5 more minutes and then serve with pasta and top with some (a lot) grated cheese. Making Good Choices Blog
I love this because it only used 1 pan and combined chicken and shrimp in one dish = easy clean up. Once again I’m all about one pot cooking. This is a meal that will warm you up. I have definitely been craving warm cooked dishes in this colder weather.
Injury Update: After 3 good days on my ankle I’m trying an easy 2 miles on it today. Danny is against this, but I want to try. If I’m eating my words later, then I guess, it’s my fault.
Tonight we are going over my friend Meg and Rob’s house for dinner to continue the celebration of my birthday! So excited! I’m bringing 2 loaves of bread and I think artichoke dip. Any other suggestions for appetizers??

I hope the two miles went well. I always bring vodka or wine to dinner parties.
