Hello!
I’m on my way to recovering and I attribute it to these 2 things.
Besides that I’ve been watching a whole lot of TV and doing basically nothing else. It’s been kind of a long 2 days so far, part of me is enjoying doing nothing and part of me really wants to get up and move. I really can’t do anything yet, so I have to embrace the relaxation.
I haven’t been cooking and we’ve been basically ordering in lots of soups and eating whatever is in the fridge. But I still have some recipes I haven’t shared with you from my holiday baking extravaganza.
Like this granola…which I’ve been eating every time I make it off the couch. It’s amazing and dare I say better than the pumpkin granola.
I based it off Jessica’s gingerbread granola, before I realized I had no ginger, but it’s still delish. It’s perfect in and/or on yogurt, fruit smoothies, ice cream or just by itself.
I had to change it around because I didn’t have a couple of the item, so here is my version of it. It’s gingerbread-ish because it still has that holiday spice to it, without having any ginger in it.
adapted from Jessica at How Sweet Eats.com Preheat oven to 375. Add all dry ingredients, except chocolate chips, to a big mixing bowl (oats, ground flax, wheat bran, salt and spices). Mix. Then all remaining ingredients (except chocolate chips) and stir well. If mixture seems too dry add 1 tbs of honey. Stir in chocolate chips. Lay mixture on a baking sheet and bake for about 20 minutes, turning every 3-5 minutes until lightly browned. Remove from oven and let cool. Making Good Choices Blog

I’m actually going to try to get out of the house today. I haven’t breathed fresh air since Thursday and I think it will be good for me.

I like the sound of that granola, even if it’s lacking ginger. It’s funny how our brains can fill in familiar flavors when you give it all the other components.
