I’m a creature of habit. If you know me, you know not only do I like routines, but I need to have plans. Plans for everything, for my day, week, month, meals, vacations, down time, etc. I’m sort of crazy.
With that said, I tend to do the same thing over and over again, until I get sick of it and I’ve reached that point. I cannot eat another salad for lunch again….until I get “un-sick” of it. I have been bringing salads to work for years. It’s the easiest thing for me to bring because I don’t have a microwave, but when I went to make my lunches for the week I was nauseated at the thought of eating a salad tomorrow.
What to do, what to do? New toppings on my salad? No won’t work. Hummus and crackers for lunch? Nope won’t do.
Ya see, part of my craziness stems from the fact that I know exactly how big my salad needs to be to fill me up for 3-4 hours until I get out of work. If I try a new meal, how will I know if it’s enough? I know, crazy. I told you.
Well, I had some chickpeas and a can of salmon from Trader Joe’s in the pantry. So I started to dream up a new lunch creation.
Salmon? Check.
Chickpeas? Check.
Quinoa? Check.
Lettuce? umm..check. But just a little.
Ingredients optional: In a medium size bowl combine salmon, chickpeas, spinach, celery and grated cheese. In a small bowl combine, vinegar, olive oil, parsley, sea salt and pepper. If desired add quinoa, walnuts, and avocado to medium bowl. Mix together (avocado will combine with the rest of the ingredients if very ripe) and then pour dressing over ingredients. Taste and add seasoning as needed. Serve over a bed of chopped lettuce and eat with (Mary’s Gone) crackers.
I started off without the avocado, quinoa and walnuts and had some of that for lunch Sunday. It was delicious, but I wanted to bulk it up for my lunchtime meals during the week, so I went back and added the 3 ingredients. It definitely added more texture and welcomed flavor.
I’m pretty sure this will fill me up and I won’t have anything to worry about, but don’t worry I always have extra food in tow, just in case!

I am actually tired of salads too! I have been doing a lot of vegetables, but with no lettuce. It sounds crazy, but it is too cold to eat a freezing salad right now. I am that creature of habit too and I am trying to break it. This is going to be a year of change for me!
This salad sounds awesome! Salmon’s by far my favorite type of fish so this definitely sounds like something worth trying.

I tend to do that, too. I get so passionate about one certain food that I overdo it until I never want to see that food again.

I’m not a big fan of fish or quinoa. Call me a weird blogger. LOL
Although I do get having to bust out of food ruts. I certainly get in those.
