Granola detox has officially begun. That’s the good news. The bad news is that I made chocolate dipped chocolate chip cookie dough balls.… and now I need a detox from those.
So onto my next fixation, which is really an old obsession: muffins. I make all types of muffins, pumpkin chocolate chip, apple pie, peanut butter chocolate chip, but these are a semi new creation. I’ve made muffins like these, but I think these are basically perfection.
Ingredients: Preheat oven to 350 degrees. In a large mixing bowl add the flour, oats, cinnamon, sugar and mix. Next, add flax meal, banana, chia seeds and applesauce to the bowl. Mix well. Add baking soda and powder. Mix then add blueberries. Fold in to batter. Spray a muffin pan (I use muffin tops and mini loaves) and spoon batter into pans. Top with a sprinkle of sugar and oats. Makes about 14 medium sized muffins. Bake for 25 minutes.
Do you get into a food “rut” and have the same foods over and over again? I’m SO guilty of that.

I always tend to just eat the same food everyday.. It just makes grocery shopping easier and you always feel like it.. No guilt. But its nice to have something different every now and again. Plus I love trying new recipes! But even then.. Ill make it and just not feel like eating it.. so I always end up going back to my “original” meal.
Oh my goodness, yes! I am forever eating the same foods over and over again. *grins* Why mess up what’s working so well?

These look so great! do you use a scoop or something to allot the muffins into the pan? they look so uniform in shape!
This recipe looks similar to one that I make. Most of my baking is vegan – it’s an easy way to sneak in extra fruit and feel indulgent. I’ve never tried using flaxmeal but I keep hearing about it and seeing it on other blogs – I should really get on that!
