Oh how I love the feeling of my sore muscles the day after doing the Core Fusion bootcamp dvd. It’s such a good workout. I wish I could get to the classes more often, so the dvds are really the next best thing.
After I finished the Core Fusion dvd, I went into the kitchen to figure out dinner. I cook dinner usually anywhere from 5-6 nights a week for a couple of reasons. My first reason is that I usually like what I cook better than ordering out…obviously there are exceptions. But when I cook I know exactly what is going into my meal, with no hidden ingredients.
My second reason is that I spend a lot of money on food each week, but we don’t eat out often, which in the end saves us money. Last year Danny and I couldn’t figure out where our money was going and after going through our credit card statements, we realized we were spending over $100 a weekend just on take out! That’s $400 a month, PLUS groceries. We quickly put a stop to that and were determined to eat out less and save money. IT WORKS, plus, you have a happier waste-line.
When I cook a meal during the week, it has to be done within an hour. Most of my meals I make are done within 35-45 minutes. But don’t forget, I don’t stand at the stove the entire time. Most of my cooking has 10-15 minutes max of prep work and then the rest of the time is letting the food cook. While it cooks, I do other things that need to be done, like empty the dishwasher…or online shop.
Soup has been a huge lifesaver for me this winter. It is quick to prepare, cook and I always make enough to have leftovers for at least one night. I re-made sweet potato leek soup Monday and both Danny and I ate it again on Tuesday. It’s super filling, easy and healthy.

Need new soup recipes-my bnut squash just didn’t hit the spot last night-thanks!
Mmmmm…I honestly like ANY soup in cold weather! I actually feel like I haven’t been making as many this winter…I need to get on that!
I totally agree… I spend about the same amount of $ on food for 5 weekdays as I do for 2 weekend days of takeout! It’s crazy!
Soups are a great way to make a healthy homemade meal that’s quick and budget friendly.

Definitely chili! But I like making “kitchen sink” soups too where I just use whatever ingredients I have on hand…
It wasn’t quite that much, but Christopher and I realized that we were spending a crazy amount eating out this past year so we’ve been cutting down on that too. For us it was “Sonic Dates” all summer long where we’d meet at Sonic in the middle of the work day for a quick lunch. My poor husband has such an addiction to Sonic, haha!
I love pasta fagioli or chili – so warm and hearty!
I also make soup with a can of refried beans, salsa and a little water – so easy and delicious.
We have also stopped eating out – I would much rather spend money on groceries but eat in more! Definitely saves money!
I have not been making enough soup this winter! I love freezing leftovers and then I have easy lunches down the line!
I love soups in the winter!! I’m boring though, I usually stick to Chicken Noodle or Butternut Squash
I love a good butternut squash soup. I’m also a lentil and bean soup fan.
Hi Nicole! I just found your blog. I’ve never actually made a soup…..I have no idea why. I love soup! I will have to try a couple of your recipes. I can’t wait to read more of your blog. Have a great night!
I’m addicted to lentil soup. I make lentil soup pretty much every weekend! My 2 favourites:
- root veggies and basil
- apricots, tomatoes and ginger (sounds strange, but very good!)
I also like making a yam soup with curry powder, peanut butter, ginger and cilantro. Again, it sounds strange, but it’s delicious!
