If you like it hot: try this Veggie Soup!

I have been craving soup lately like nobody’s business. All I want is steaming hot food for dinner so I’ve been going with it. I made this soup right after Christmas after about ten days straight of gorging and not moving.

It was kind of a sugar detox soup for me, because clearly I don’t do any other kinds of detoxes. I love food if you haven’t noticed and couldn’t go more than um…3 hours without it. It’s true. Just ask my family. No food = cranky me. And the only reason why I am calling this detox soup is because it isn’t filled with sugar, chocolate or loads of pasta.

After basically single handedly finishing the first pot, I decided to make this again this week. I get obsessed with things and make them over and over again (ie: granola and chocolate balls).

This soup is a perfect lunch or dinner and really fills you up. It’s got lots of veggies in it and feel free to add, leave out or change any of them. The first time I made it without peas and the second time I added peas.

This soup is also great for a beginner cook because you can’t mess it up. Just add spices a little at a time, stir and taste, no problem there.

I love doing soups for “detox” too! They’re so good for you– but also super-filling, so you don’t feel like you’re starving yourself!

I love veggie soup. Is it weird that I eat it slow, eating each veggie seperatly? Like I eat all the carrots first, then all the celery, then all the mushrooms…Yeah, that’s weird.

I hear ya, we’ve been eating soup like there’s no tomorrow this winter. *grins* Gotta love it! And I’m like you in that going much more than 3 hours without food wouldn’t cut it. ;)

I love your blog! The soup looks great…I’m going to have to try that soon. After holiday eating, I rely on green juices big salads to get me back on track (as long as I can still have my chocolate!).

Love the veggie soup! I seriously need to start making my own soup..buying the cans just isn’t money effecient. Plus, I always add more to the canned soup anyway! haha
