Hummus…how I’ve missed you. You are a great addition to my lunches and a perfect snack always waiting for me when I get home. I got sick of you awhile ago and I’ve so glad I’ve let you back into my life….
Chickpeas are one of the most versatile beans. They can be made in so many different ways, roasted, raw, baked, mashed, hummus-ed. I love them all equally, and I was glad when I made some this weekend. Hummus can be made traditionally, or with olives, roasted red peppers, sun dried tomatoes or even an avocado if you want to get really crazy.
Add all ingredients to food processor. Pulse until well mixed, scraping down sides as needed. Slowly stream in water, 1/4 cup at a time. Only add water until you’ve reached the consistency wanted. (Less water=more chunky.) Taste and add in more salt, pepper and parsley and mix as needed. *To make olive and garlic hummus, just add in a total of 3 garlic cloves and about 10-12 pitted green and black olives.*

After work I’m hitting up the treadmill for some intervals again. I’m not going to add any more mileage until next week. I’m thinking of running a mile straight today and then doing intervals for the rest. Yesterday I did Core Fusion Bootcamp which seems to be helping to strengthen my ankle. I cannot wait to get back to running longer distances and races. I’m so (emotionally) ready!!!!

I think I went through hummus burnout a while back…but it is back with a vengeance, now! I just made some of my own with sundried tomatoes yesterday. Never thought I’d enjoy my own hummus since I love it suuuuper smooth and creamy, but I do!
A I’ve reintroduced is…dates, maybe? I used to have them for a snack allll the time, sort of “forgot” about them, and now have them for snack and dessert

I loooooove hummus-I don’t think I could go a week with out it! I’d say a new food would be kale-I didn’t used to like it, then I steamed it and put it in pasta and loved it…now I crave it! (good craving to have)
I think mine would be kale too! On Friday I ate a whole bunch myself (cooked) and I chopped up head(?) to eat raw in salad this week. I haven’t had it in like a year and all of a sudden I’m loving it!
I need to start making my own hummus! I always wimp out and just buy it, but it’s such a cinch to make!
Lurv hummus. I really love making my own — it’s the ONE thing that I will pull out my food processor for. It’s so easy to tweak and make exactly how I like it!

I think I am going to give this recipe a try, I have never made hummus!
I have to make my own hummus because I’m deathly allergic to tahini and I have found only one hummus without it.
My favorite addition to hummus is avocado… mmmm.
