Happy President’s Day!

I’m doing a bunch of work for Integrative Nutrition today, getting papers in order, ready to start seeing some clients! I have a big 3 inch binder all ready to be organized…what can I say, it’s the teacher in me!
Yesterday we ran around all day, from hot yoga to house hunting. We didn’t have that much success, but every time we look a house, we know more of what we want, so it’s a learning experience.
When we got home, we were starving…so I had to think fast! I already had some fresh bread, so I quickly surveyed my fridge.
I love making quick dinners…
Preheat oven to 375 degrees. Peel a large eggplant and cut into slices. Cut 2 red peppers into strips. Spray a baking sheet with olive oil. Lay down eggplant slices and red pepper slices on baking sheet. Spray or drizzle with olive oil. Sprinkle with sea salt and black pepper. Bake in oven for about 35 minutes. Flip eggplant at about 20 minutes. Arrange olives, peppers, eggplant and mozzarella on a plate. Spoon bruschetta into a bowl and enjoy!
This makes for a perfect quick and easy dinner. It doesn’t seem like a lot of food, but it quickly fills you up! You can also make paninis out of these ingredients as well!

The combination of spices she uses has become one of my favorites. I throw in whatever veggies I need to use up.
I love making tasting plates like this– lots of variety!
I wish I could afford the rest of the tuition for IIN! I have been looking into it, but just not in the cards Such an amazing school though!
The Mediterranean plate looks awesome. I usually throw together a spelt pasta or quinoa dish for a quick meal!
We do omelets for quick or appetizers. We did the appetizer thing on Friday and it really is fun…tons of hummus, veggies, meats, cheeses and fresh bread!
Mediterranean food seems to be made for small portions, snacking opportunities, and to serve when friends are over. It’s great!
