Work woes. We all have them. I’m certain some are worse than others. I don’t really talk about work that much because I try to focus on the positive aspects of it, like the 27 kids who look forward (mostly) to seeing me everyday. And the fact I get a paycheck regularly and my health insurance is pretty good.
Yesterday was a not so good day…which has kind of been happening a lot lately. The state of the education system weighs on me heavily each day…enough said.
What to do when you have a bad day? Well, since I gave up shopping for Lent, I hit the gym. I decided to do a 45 minutes solo spin session. I haven’t been on a spin bike since pre-surgery in December, so I just decided to wing it. I went with the music and just did whatever I felt like. It felt good.
After the gym, I came home to new running sneakers (YES!) and the daunting task of making dinner.(I know you love my pj’s.)
I flipped though a cookbook real quick, saw the name broiled eggplant and went with it. 10 minutes later I had broiled eggplant open faced sandwiches.
Broiled Eggplant Sandwiches
- 1 eggplant, cut into 1/2 inch thick slices
- 2 tbsp canola oil
- sea salt and black pepper
- 1 can bruschetta or tomato slices (I use Trader Joe’s)
- (optional) mozzarella cheese
- 4-5 fresh basil leaves
- whole grain rolls (I used Udi’s hamburger rolls)
Preheat oven to high broil. Spray a cookie sheet with non stick spray and arrange eggplant slices. Drizzle with canola oil and sprinkle with sea salt. Broil in oven for 6 minutes. Remove from oven, flip and then broil for 4 more minutes. While broiling the second side, toast the rolls. After the rolls are toasted, add shredded mozzarella to tops of rolls and put in broiler to melt for a minute. Remove eggplant from oven and place one piece on top of each half of the roll. Spoon bruschetta on rolls and garnish with basil. (See how to easily chiffonade basil.)

Whenever I have a bad day at work a good sweat session usually cheers me up. If that doesn’t do the trick, a glass of wine ALWAYS works : )
A good old sweat session is always great after a bad day. I like to take a long walk with my dogs too…that always raises my spirits

Sorry about the rough day Those eggplant sanwhiches look great though!! I dont LOVE eggplant, but I do like it when it is cooked well. Ive had an eggplant sanwhich at a restaurant before that I ADORED. It was so yummy, but I havent figured out how to recreate it!
Those look really good!! I love eggplant but the husband doesn’t…crazy man! I am sorry you had a bad day yesterday but I hope that today is better!
