March 1st! I feel like I remember writing that this time last year. I feel like March really gives me hope for warmer weather and spring. Does it make you feel the same? I am yearning for capris, ballet flats and blazers….
While I was home last week I was all busy dreaming up new snacks. While I didn’t really get too crazy or stray too far from my usual snacks, I felt like this was different enough to share. Why not right?
Ingredients In a food processor, process the cashews until it becomes almost a flour like consistency. (It’s okay if it’s small pieces of cashews.) Add dates and process again until it balls up. Remove mixture and place in a large bowl. Add remaining ingredients, except cacao nibs and mix well. Shape into balls and then roll in cacao nibs. Freeze and enjoy. Making Good Choices Blog
I love these chocolate balls because they give you an energy boost from the dates and are still chocolately and decadent.
After work I’ll be hitting up the treadmill. I hope it’s warm enough to run outside one morning this week. I needed sleep this morning! Even my students told me I looked tired yesterday.

I am VERY excited for spring. It’s a cold day here, but it’s supposed to warm up and is really sunny, so I’m feeling hopeful

I love making snack balls! My go-to snack is almost always cheese, fruit, crackers, nuts, or a combo of all of the above.
