This is what you do when you are home alone for dinner and you have no energy to cook. This is what happens when you have the same exact dinner 3 nights in a row and you are a blogger… you get a picture of a repeated meal.
I’ve literally had this for 3 days. I think it even got better each time. So why haven’t you made this for dinner yet?
Today is Ash Wednesday, while I’m not deeply religious, I do try and do something for Lent every year. Somethings I’ve done in the past are:
- given up white flour and sugar (last year)
- been more “green” and minimized my use of paper towels, ziplock bags, paper waste
- not shopped for myself (clothing, shoes, bags)
I have given up shopping for the past 2 years and quite successfully I might add. I will be giving up shopping and the flour again, however when I get to Italy I will consider my sacrifice over. You don’t get to go to Italy ever year and you can bet I will be eating my fair share of bread, pizza, pasta and gelato…and shopping.
In an effort to be more positive…I am also going to name out loud one thing/person I am grateful for everyday. It is so easy to get caught up with the stress of work and life and I need to change my mindset. Overall I’m pretty positive and I know doing this will help even more.
So starting today: I’m grateful to work with someone who makes me laugh every day. If we didn’t laugh we’d cry, but I’m grateful for that.

Giving up flour?!? You are brave! I’d be a mess.
I’m giving up baked goods. I’ve been on a baking streak, and I really need to get away from it before I gain 30 lbs!

I’m not giving things up this year—I already did it a month ago, and it’s going well, so I don’t want to mess with it!
I’m totally grateful for my mom. She’s awesome.
I try to reflect on things I’m grateful for everyday—it always makes me feel good!
I am so grateful for my husband. He is such a positive force in my life and can always make me feel better about things when I start to let the bad stuff get to me.
Nice thoughts on considering it over when you go to Italy (so jealous over here)-eat some extra pizza and pasta for me!!!!!
I had a “mentor” in my previous job who was the most grateful person i’d ever met-i’d have to say that he has rubbed off on me and when I catch myself, I try and think about EVERYTHING I should be grateful for!

Hey, leftovers are easy and save money – gotta love ‘em I’m grateful for my health and for my family. With those two things in my life, I can’t really complain about anything!

When Im home alone I usually make myself a smoothie in a bowl for dinner or sweet potato fries lol
And for Lent this year I am giving up my evening snack as well as making a more conscious effort to be positive!
I am giving up sugar this year. Do you have any tips/advice to get me through it? This is going to be a HUGE test of my faith. I am grateful for my job, even though I don’t love it.

I’m the queen of repeat meals. I’m broke and single so I don’t worry about making stuff for anyone else.
I’m not giving anything up this year, but I’m giving more of myself instead. Every day I’m going to do something to help a coworker or someone in my family. Whether it’s offering to do their filing or pick up my mom’s dry cleaning. I want to be more helpful.
