Morning!
Today is day 3 of back on track for me. I feel better, but the time change is still kicking my butt. I keep waking up at 4 am, ready and raring to go…it probably doesn’t help I passed out by 8 pm last night. 8 pm…literally, out cold.
I told you yesterday that I am eating really clean right now, but I still wanted to make my blueberry oat bars. When I went to make them, somehow, despite the $150 spent at Trader Joe’s, I was out of oats. I figured…why not try it with quinoa, right?
They turned out really well! They are different, obviously, without that oat-y taste, but have a nuttier taste. I love them, but then again, I know I’m not normal.
Still, they’re worth a try!
Preheat oven to 325 degrees. In a medium sized saucepan bring the quinoa, cinnamon, maple syrup, vanilla and water to a boil. Once it comes to a boil, lower the heat to to a simmer and let cook for about 15 minutes until the liquid is absorbed. Let quinoa totally cool before continuing with the rest of the recipe. In a large mixing bowl cooled quinoa, chia seeds, cacao nibs, hemp and sea salt. Mix together. Add in the wet ingredients, almond butter, agave nectar, and flax mixture. Mix until combined, then add blueberries, last. Place a piece of wax paper on a baking sheet. Spread quinoa mixture over baking sheet (I used a brownie pan, 9×13). The remaining mixture I put in baking cups and baked them like that. Bake for 40 minutes and then let cool before cutting into squares. Freeze them after 1 day to stay fresh.
These do crumble a little bit easier than oat bars, but they still work, I promise! *If you don’t want so much, you also could half this recipe, but I like to make more, because my husband is a garbage disposal!

I hate when I spend that much money and still forget something! It is so frustrating. Good call in the quinoa though! These look delicious. My go to snack would be an apple. I have a serious addiction!
My favorite clean-eating snack is apple and some watermelons!
I am pretty sure I have ALL these ingredients! Except freeze dried blueberries. I have frozen ones…can I get away with using them??? I need something to do tomorrow and these look great! Good snack for the hospital if I EVER go into labor :/
FYI you have “Bake for 40 hour” I assume you mean 400 degrees for an hour. Just so you know!!!!
