Morning! Happy Weekend! I’m up and at em already. Make one batch of granola already, that was sweet enough for me, but not for the general public.
Need to try again later, but for now I wanted to share with you some blog inspiration. Not having an 8-3 job, 5 days a week leaves me some time to actually read blogs and enjoy what others are doing, saying and of course, cooking/baking.
If you need some serious inspiration and confirmation in life, then really, you must read Angela’s post.
As for the rest, I hope you are hungry! Hopefully I’ll get to make some of these in the upcoming week. I desperately need dinner inspiration. I still have none. I’m pretty sure dinner has been my least favorite meal for 4 months now.

Nicole – I experimented with a mildly sweetened granola this week and really love it. Not sure I could put the exact recipe together again, but I chopped up dates, soaked them in boiling water and left them overnight. In the morning, I added agave nectar to the date liquid and poured it over the granola ingredients before baking. It had a really nice flavor, and was very lightly sweetened. Great for someone who has blood sugar concerns.

Thanks for the blog love! Hope you get a chance to make them. They take a bit because of the baking time but they are still a very simple thing to make. You know I only do simple. LOL
