Scorcher! I was supposed to get up to run 2 or 3 miles this morning, but it didn’t happen. We “thought” it may rain so we decided to sleep in. Oh well, plans change and I’ll be going to yoga later.

In other news we are close to our closing on our house, which means I’m on a personal mission to clean out our cabinet. When I went food shopping this week, I stayed away from the canned aisle. I am usually obsessed with buying cans of artichokes, beans, refried beans, etc. Not anymore (until we move). It’s helping me two fold because on one hand I’m getting back cabinet space and on the other I’m saving money. I really, honestly have no clue what’s even in my cabinet/pantry, but I am finding out now.
For a small apartment we have a ton of cabinet space… and it’s a good thing because I needed it. But enough is enough and I am using up the food in there. 4 cans down in 2 dinners.
So what was last night?
In a medium pan, on medium heat, heat 1 tbsp canola oil and saute the garlic. When lightly browned add salmon, beans, tomatoes and kale. Juice the lemon in a bowl and add salt and pepper to taste. Pour the lemon over the pan and mix. Let heat through for about 10 minutes. Season with additional salt and pepper to taste. Serve over pasta or arugula salad.
I usually do not like cooked meals during the summer at all (unless they are on the grill). I’ve been living off of multiple salads a day, but having this over arugula was a welcomed change. I’m feeling a little dinner creativity creep back into my bones.

I love canned food too, so convenient and cheap!
I hate meals having to clean out the cabinet. They work, but its always so hard for me!! Definitely worth it to do though.

That’s a smart way to clean the cabinet! LOL. Just by making benefit out of those stored goodies is awesome. The food looks yummy and healthy. I’m sure you are proud of the result from your personal mission to clean out your cabinet. It’s definitely a successful mission!
