Spotlight on: Wheat Berries!

Told you I’d be back with a cabinet clean out!

So how do I go about this cabinet clean out? I usually just close my eyes, stick my arm in and pull something out. Dinner is based around this. Kind of. I’m a grains freak. Millet. Amaranth. Bulger I have all kind of grains stored in my pantry…but guess what, they are all still CLOSED. As in unopened. As in I never took another look at them, past my unsuccessful blip with sprouting wheatberries that ended in my holding my nose and a wasting of a lot of grains. So because I set my goals high for myself, that half opened bag of wheatberries was haunting me last night.

I know many of you are reading, going okay, here she goes with her weird ingredients I’m never going to buy again. But wait, let me convince you on these things. As far as taste and consistency of wheat berries, think barley. They have a nice nutty chew to them. (Which I didn’t know before last night, because remember, I never ate them before.) But, you ALL know what a wheat berry is…. it’s what whole wheat flour is made from!

“The term wheatberry or wheat berry refers to the entire wheat kernel (except for the hull), comprising the bran, germ, and endosperm. Wheatberries have a tan to reddish brown color and are available as either a hard or soft processed grain. they also provide nutritional benefits since wheat berries are rich in fiber, with 4 grams in a ½-cup cooked portion; a good source of protein with 6 grams per serving; and low in fat with 1 gram per serving.” From wikipedia and livestrong.com

So what’s my point? If you are tired of rice and pasta, wheat berries are an awesome grain to try. Pick some up at Whole Foods or any natural foods store. After having this bag in the pantry, I was excited to give it a try.

What did I do with my wheat berries? Made them into a veggie burger. I KNOW, I know, this sounds intimidating, but if you have a food processor and a large bowl, it’s NOT!

ingredients

The dijon and garlic really give this “burger” a nice kick to it. I cut these burgers in half and rolled them in some grape leaves. I’ll post about grape leaves tomorrow!

I’ve never had wheatberries, I’m not sure if they’re available in Ireland…I love barley though so I might try this with barley instead!

I’ve never used wheat berries. I’ve looked for them in my grocery store, but they don’t sell them. Maybe I’ll try them the next time at the Whole Foods Salad bar.

I still have never made my own veggie burgers – so sad!
The Sprouted Bread I eat (French Meadow brand) uses sprouted wheat berries so I actually eat them on a regular basis. :)

I’m definitely going to give this recipe a try! I buy TJ’s pre-cooked lentils regularly – perfect use for them.
