Ahh the cuisine of a person living between two places.
Well actually, we are living in one place and have all our stuff in another. It’s been fun…and a challenge. And by fun, I don’t mean fun, I mean annoying.
I didn’t realize how much I use my microwave on a daily basis until I didn’t have one. It wouldn’t be such a big deal, except I only have one saute pan right now, so I really can’t do anything but drive to my mom’s to use hers.
So the big question is what have I been eating?
Yesterday was the most standard day (of eating) I’ve had, but besides that it’s been a lot of random food. Take a look: (side note: this is not a full day of meals for me, this is random food I’ve eaten over the past couple of days.)
Last night we decided we needed a brand new table to work/eat on…. so we borrowed a folding table. Isn’t is gorg?
Danny and I never, ever buy paper plates or plastic cups because they are a waste, but we have to make an exception until all of our stuff is here. I actually hate it. They are so floppy, even the good ones.
For dinner last night I made a veggie & white bean soup with a side of heirloom tomato & cucumber salad.
In a large soup pot, spray with olive oil and lightly brown garlic on medium heat. Throw in all veggies and cover. Cook for about 10 minutes, mixing every 2-3 minutes. Add stock, broth and diced tomatoes. Mix well. Let simmer for 10 minutes and add beans, basil, salt & pepper. Let simmer for 30-40 minutes. Serve with brown rice pasta, rice, whole wheat pasta, etc.
First homemade meal in new house = winner.
First meal eaten on a folding table with outdoor chairs = an experience to laugh about.

Oh, I know what you mean. I hate paper plates. I don’t like being wasteful, but also like you said – they are just floppy. But it’s hard when you are between places like that.
And girl, I so cannot believe that it is soup season again. I’m not ready to let go of my summer, haha!

I know exactly what you mean about the microwave! Ours blew out Christmas eve last year and we couldn’t get in a new one for a whole week. I just about cried in the store when they told us, too. But by the end of the week, we had learned how to use the stove for the same things and then hardly used to microwave once we got it- haha!

I love this soup recipe. It reminds me of a healthier, fresher version of our college concoctions!
