WIAW: 3rd Edition!

Here we are at Wednesday again, how does that happen SO fast?? Today I have lots of baking and food shopping on the schedule, so I’ll be moving off this couch as soon as I hit PUBLISH!

Yesterday was a day of unpacking and making this feel more like a home. Danny and I feel so lucky and blessed to own this home and we say a couple of times a day we can’t believe we live here. Right now it’s the calm before the storm. We’re going to be re-doing the kitchen because it just doesn’t work for us. We’re lucky enough to be able to do it ourselves with the skills of Danny and family & friends to help us.

On another note I get so proud of myself when I remember to take pictures of my food. I’m not a blogger who photographs (or instagram more realistically) every single thing I eat, so it’s always hard to remember the day before. Luckily I’m getting into the swing of things now!

Onto the food!

  • Quick and easy meals ARE realistic. You can cook in 30 minutes and that’s what I do 99% of the time.

Like I said the first time: Everyone is different and we all have different caloric needs to fuel our body. I have no idea how many calories I consume on an average day because I don’t count calories, portions, foods, etc. I eat what I want to eat, when I want to eat it. You know I believe in eating well, which to me means eating whole foods that are minimally processed. As long as 90% of my food fits under that catagory, I am doing my job of fueling healthfully.

Breakfast: quinoa topped with (more) almond butter, cacao nibs, shelled hemp, goji berries and dried blueberries

To make the quinoa I used this granola recipe but didn’t bake it.

fresh arugula, 2 hardboiled eggs, spaghetti squash and leftover grilled veggies

Grilled veggies were from yesterday’s recipe.

apple for a snack

another snack 2 instant boost chocolate balls

Dinner: soup w/ spinach, yellow pepper, 2 eggs, cabbage, lentils & barley with a side of brussel sprouts

dessert: some coconut yogurt with chocolate chips

I didn’t take pictures of my coffee yesterday, but I also had 2 cups yesterday, so let that be noted.

What was your favorite thing you ate lately? Mine was the quinoa breakfast, a nice change from oats.

Definitely agree that planning ahead and prepping makes a WORLD of difference. Your eats look amazing…and so happy you’re getting settled. :)

I tried quinoa the other day and it was rancid and so I didn’t like it. I wonder if I”d like it sweet….yours looks good!!
I plan my meals the night before which works well because then I don’t have to flounder around. I also write down what I have to use up and cross it off as I use it.
