I had a great pesto bean dip for you today, but my husband ate it all before I could photograph it. I’ll make it again, don’t worry, but for now I have a different idea.
The thing about having a blog is I’m always looking for new recipes, which is great. Except, the downside is, I tend to forget about the other recipes I posted months, maybe even years ago. Well, today is all for bringing them back.
Why not take a look at great recipes I’ve made so we can all re-make them together?
I know that I mostly post veggie and vegan recipes here, but the truth is I do eat meat. I eat it in small amounts, but for some reason it rarely makes the blog.
First things first, I will apologize for the awful pictures. I am by no means a wonderful photographer now, but at least I learned the wonders of natural light. Don’t let the bad light deter you from these recipes!
All these recipes have been made, tried and loved by ME!
check out my major hitch hiker thumb…
Turkey Burgers: This is my go-to recipe. I made these a couple of weeks ago and put them on the grill. No fail.
Salmon with Lemon Sauce: Out of all the recipes I’ve shared with my in-laws, this is hands down their favorite. I think they make it every other week.
Smoky Chicken Corn Chowder: I plan on making this very soon. This is a long lost recipe that I forgot about! A perfect meal to warm you up from the inside out.
Zucchini Boats: Perfect for a meat-less meal. The portobella mushroom gives it a meaty taste.
Quinoa Lentil Casserole: Protein filled and perfect as a main dish or as a taco stuffing. Make this at the beginning of the week and eat it multiple times during the week!
So there it is, I’m on a personal mission to bring some of these recipes back. I know Danny is grateful, considering dinners lately haven’t been much to write home about…
What is your favorite recipe that you’ve forgetten about or haven’t made in a long time?

Love, love, love the zucchini boats!!! I need those in my life. Making them immediately.
I feel like that too – I don’t make favorite recipes as much anymore because I’m always looking for new ones!
