Every morning I wake up and am surprised at how dark it is out. The morning is my favorite time of day and I just feel like it should be sunny and bright out. I’ve been waking up, coming downstairs and turning on the fireplace immediately. Love the fireplace and it’s ability to turn on and off with a switch. On another note, it’s funny how when you wake up at the same time each morning, the same people are on twitter and they are the first people you chat with. Love my twitter peeps.
After telling you about my little protein experiment for the month, I decided to get all my proteins together yesterday. I’ll post them tomorrow to show you what they look like and what I did to make it super easy.
Yesterday for lunch (or meal 3?) I made some lettuce wraps. I should have bought large romaine leaves, but I wanted something more colorful. The whole “wrap” thing didn’t work. I had to basically palm it. I suggest getting romaine or swiss chard and wrapping it with that.
These were really good and easy to make. If you cut up extras and put them in seperate containers you will have multiple servings. Work once, eat 2-3 times…makes life much easier! Also feel free to replace tofu with sliced grilled chicken, ground turkey, hardboiled eggs, hummus, etc. Anything can go in there for a great lunch!
Ingredients
- 1 block tofu, extra firm, cut up into blocks
- romaine of swiss chard leaves 4-6
- carrots, shredded or baby carrots (cut up into small pieces)
- grape tomatoes, cut in half
- broccoli slaw
- 1/4 – 1/2 avocado, cut into slices
Cook tofu as desired. (I cooked it stove top in some low sodium vegetable broth with salt & pepper). Prepare and arrange cut up veggies to get ready for assembly. Place a little bit of each veggie & 2-3 pieces of tofu in center of lettuce. Roll up and eat. Serve with your favorite dressing.
