Anyways, to keep the good things going, I have a delicious recipe for you today. Super Bowl is coming up in less then two weeks, so Jill and I decided to get together and make some healthy recipes. Who doesn’t want to eat something delicious on Super Bowl? That’s basically the ONLY reason I LIKE Super Bowl!
After brainstorming, we decided to do 3 different recipes. I’ve made artichoke dip before, but I have to say I am borderline obsessed with this one. It’s low in fat and calories, uses minimal amount of cheese AND can be enjoyed with chips, carrots, celery or just with a FORK.
Ingredients Preheat oven to 350 degrees. In a food processor combine the spinach and artichokes. Process until blended very well. Stop the processor and scrape down the sides when needed. In a small bowl, juice 1/2 the lemon and remove any pits. Add chobani, lemon juice, garlic, salt and pepper to bowl and process until combined. Add the contents of the bowl to a large round or oval baking dish (pyrex or corningware). In a small food processing bowl, process bread until it becomes breadcrumbs. Sprinkle breadcrumbs and feta over the top of spinach/artichoke mixture. Bake in the oven for 30 minutes and ENJOY!
