Wednesday, Wednesday. How are all your weeks going? I’m sitting here in my usual routine of coffee, fireplace, twitter, blog reading, computer work and blogging. I’m so focused at this time of morning! Anyone else?
Top Things that makes me happy at 5:30 am:
- The morning & my morning coffee.
- Warming up by the fireplace.
- Quiet
- NBC news
- the fact it’s getting lighter earlier
What else makes me happy? Making new, healthy recipes. A lot of people post WIAW (what I ate Wednesday) today, so I thought going with the theme, I’d post my favorite recipe of the past week…kind of the same thing right?
I made this recipe for Super Bowl Sunday and I plan on making it again…real soon. Perfect for any party…or dinner. Or snack. I would say you should figure 2-4 potato skins per person, which is 1/2 – 1 potato per person.
ingredients First poke holes in your sweet potatoes. Cook sweet potatoes either in the oven or microwave. After cooked, cut them into 4 pieces. Preheat oven to 425 degrees. Scoop out the flesh of the sweet potatoes, leaving a little bit on the inside. Spray with olive oil on the top and bottoms and sprinkle with sea salt and black pepper. Bake in the oven for 20 minutes. Remove from oven. Top with some cheese, olives and turkey bacon. Bake in oven for 10 minutes. After they come out, top with Greek yogurt!
Another win of this recipe is that I had mashed sweet potato for another meal!
This recipe makes me want to jump up and down it’s so awesome.

mmm warming up by the fireplace DOES sound so nice. As much as I don’t love being up before the sun, I do love the peace and quiet at that hour.

I don’t know that sweet potato skins can be eaten. In our place, we just throw them away. How long does it take to cook that sweet potato dish?

Sweet potatoes are my new favorite veggie. Although baked sweet potato fries are great anytime, I’ve been trying to branch out a little and try new recipes…definitely bookmarking this! And I did workout today…got my yoga on!
