I’m itching to get outside for my run today, but I’m trying to wait until it warms up a bit. It’s supposed to get near 70 in NY! Unbelievable! Who else is planning on getting outside today?
With all the baking I do for Pure Bliss, lately, the rest of meals & desserts are being majorly neglected. We’ve had takeout much more than I’d like to admit in the past couple of weeks. Danny has been asking for some type of dessert to replenish his stocks. I made SO much over Christmas and stored it all in the freezer. He just finished basically every dessert from then, so it was time to make something new.
Chobani has sent me a whole bunch of their 0% plain yogurt, so I figured I’d experiment with that. They cupcakes have more of a muffin like texture, but they are delicious.
Don’t get me wrong, these are healthier cupcakes. They do not taste like super decadent cupcakes, but they DO satisfy a sweet tooth. Just gotta tell it like it is. The frosting was super, super easy and took about 2 minutes or less to put together. This frosting tastes best fresh, so I wouldn’t frost all your cupcakes until you are ready to eat them.
Cake Ingredients Chobani Chocolate Frosting Melt chocolate chips and mix with chobani. Frost onto cooled cupcakes when ready to eat!

I pinned and tweeted. I tried Vanilla Chocolate Chunk at ExpoWest this weekend. It was so good! Not sure its 0%, but I bet it would taste good with this recipe.

Yummy yum!! I love subbing chobani or applesauce or pumpkin puree for the fat in cupcakes. SO YUMMY!!
