I got up at 8:30…I feel like half the morning is gone already! I’ve been waking up from 5:00 – 6:30 and then falling back asleep until around 8:30. So annoying! I’m lucky I can sleep in because my schedule is flexible, but it basically just means my day goes an hour and a half later…which I guess is fine because I need the sleep.
Yesterday I got the very fun opportunity to do a talk and make a healthy snack with a 2nd grade girl scout troupe. This is one of the best parts of my job honestly. I love going to visit kids and talk to them about healthy eating. I was very impressed by all the healthy snacks they love to eat. We also talked about how healthy snacks make us feel, verse junky snacks. They agree that junky snacks make them feel tired and give them belly-aches. (Not that too much of healthy food can’t do that too!)
I wanted to share the recipe for the raw chocolate chip cookie I came up with because they LOVED it so much. I had to do a completely nut free recipe because of some tree nut & peanut allergies. Seriously, this was a huge hit and something I was eating by the spoonful when I came up with the recipe.
Teachers: You could totally make this with your class as well. I also have a little whole grain worksheet you can give out to your class. If you want to email me, I’ll send it to to you!
Place oats in a food processor and process until ground until almost but not completely a flour like consistency. (More like broken up oats.) Remove and place in a bowl. Add in agave necta and vanilla extract. Mix well. Add in coconut oil. Using a spatula or your hands, mix until coconut oil is completely incorporated. Add in chocolate chips and mix. Form into shapes, roll into balls, etc. You can freeze these so it will hold the shape, but that’s optional. Enjoy!
These are a perfect snack to make at home with your kids. They can eat it with a spoon or have fun making shapes. They also can make this completely by themselves because there is no heating, baking, cutting etc. We even just used a plastic cup to measure everything. You can also play with the agave & coconut oil amounts to suit your needs exactly. Have fun with this!

Great idea! I’ve got all the ingredients on hand. When nap time is over we’ll be making these for our afternoon snack. Yum!
That sounds so fun (your job ROCKS), and looks like a delicious, simple recipe! Question: can it be done without the food processor part? Also, are you using the coconut oil at room temperature? I have so much trouble mixing when it’s so clumpy!
Regardless, I’ll be giving these a try. I love making cookies where there’s no guilt about eating the batter!
