Morning! Welcome May and a very rainy day. I think I shall stay inside all day….except for 8:30 spin class. I called and signed up for spin so I’d actually attempt to get myself there. Most days of the week lately, I work all morning and then workout mid day – early afternoon. I’ve always been a morning person, so I’m attempting to get back into morning workouts. My first attempt is today. Hopefully I get off the couch in 7 minutes. (Update: I did.)

- NatureBox sent me a wonderful box of snacks that were quickly eaten up my husband, sister and myself. I haven’t blogged about this…because well..they are long gone. But they are a wonderful company and not only do I love their snacks and packaging, but I love what they are trying to do. They are trying to help the world eat healthy with snacks..month by month.
- I just downloaded Nike Training App. It’s FREE and I’ll be doing my first weight workout with them today. There are 4 options: Get Lean, Get Toned, Get Strong and Get Focused for you to choose from, based on your goals. I’ll let you know how it goes, but it seems AWESOME. *Update: I used it this morning and LOVE IT. I did a 15 minute lean legs workout. I’ll have to do another post on it when I use it more.

- I made an amazing dinner last night. You really need to make it.
Ingredients In a large saucepan, add olive oil, garlic and onions. Lightly brown. Add 2 cans of tomatoes and let come to a boil and then simmer. Add eggplant and mushrooms. Stir. Let simmer for 10 minutes. Add sea salt and black pepper. Let simmer on stove for about 25-30 minutes. Meanwhile, while sauce is simmering, cook salmon. Drizzle salmon with olive oil, sea salt and black pepper, then bake for 25 minutes at 350 degrees, covered with an aluminum foil tent. When sauce is done, top with fresh basil, stir together. Using a fork, flake off salmon and add to sauce in pieces. If desired serve over pasta or spiralized zucchini!

I’ll definitely be moving more in May. Also have a goal to give up ‘naughty’ desserts. Biggest hurdle is nutrition now so I need to focus on that.
As for today, my kitty is currently at the vet having his last surgery (he fractured his leg 8 weeks ago). Getting the pin out today and should be good to go in 7-10 days. I just feel bad for the little guy. So that’s what going on this Tuesday for me.

I’m doing Moving More in May too!! Definitely am starting to notice that since I’m a Marketing Intern & college senior most of my days are spent sitting. It’s a great way to push me to move more!
