Morning again! Thank you so much for all the comments, tweets and emails I recieved after my post about my Pure Bliss Eats Small Business Journey. I loved reading every one of them. I’m so happy to be able to share my story with you and will continue to along the way.
Yesterday after packing up some boxes to be shipped out I decided to make a nice sweet snack. I have been slacking in the kitchen in a major way. I usually just throw things together that aren’t really blog worthy, so yesterday I figured why not make something I can actually post? I occasionally buy KIND bars, which has been a new treat for me. Yes, even though I own my own snack company, I still support other businesses. But yesterday I decided to make my own version of KIND bars…and I have to say they turned out very tasty!

These bars are a perfect snack for anytime of the day. They are chock full of protein, healthy fat and anti-oxidants! Ingredients Preheat oven to 350 degrees. In a food processor, pulse almonds and walnuts so they are broken up into smaller pieces. Remove and place in a large bowl. Add all other dry ingredients: hemp, chia, blueberries, salt and chocolate chips. Mix together. Stir in honey and coconut oil and mix until it’s all evenly coated. Spread evenly in a 8×8 or 9×9 pan, depending on desired thickness. Press down with a spatula so it’s all even. Bake for 15 minutes. Remove from oven and let cool for 5-10 minutes. After cooled, melt chocolate. Spread an even layer over top of bars. Freeze until chocolate hardens. Take out of freezer, let sit for 3-5 minutes and cut into pieces. Enjoy!

I love KIND bars! I actually like it even more than Larabars which used to be my favorite. This looks great. And you know I like anything chocolate covered

I love Kind bars too. I haven’t found one I didn’t like, but the cranberry, cherry and peanuts and chocolate are my favorite three. I’ll have to try this bar that you just made.
