Zucchini Fries, Homemade Ricotta & A Spot in ING NY Marathon!

Hi! Where did the week go?

I’m poppin’ in to say hi before another full day of work. We’re going to the Jersey shore for a nice 3 day weekend. It’s going to be our version of a babymoon. Sneaking away from house work to head to the beach…I’ll take it.

Instead of boring you with what I’ve been doing the past two days, I’ll just tell you what I’ve been eating. Instead of coming up with my own recipes, I’ve just been scoping out different blogger recipes. I told you that dinner has been the hardest meal for me. I tend to not want to eat ANYTHING, but then all the sudden I’m starving and I need to figure it out FAST. Tuesday night I decided I was making zucchini fries and fresh homemade ricotta. This was one of my best ideas of the month, I’ll say.

The ricotta took about 20 minutes start to finish…SUPER easy. My only regret is that I wish I made more, but since it was so easy, I’ll certainly be making it again. The zucchini, also super easy. I decided to make spaghetti, tomato sauce and throw in some spinach to make this a nice well rounded meal. So really…do this.

Zucchini fries came from Caroline at Chocolate and Carrots. 

Homemade ricotta came from Erica at Erica Miss America.

I know I said this on instagram already, but seriously that ricotta is getting bookmarked. Love, love, love zucchini fries as well. I honestly have been heat lagged lately and haven’t been into dinners either. With you on that. I’ve been creating huge “powerbowls” or gulping lots of sunwarrior smoothies for lunch. Have fun at the beach! :)

Woo hoo! 26 weeks…. that’s almost 1 week for every mile in a marathon.
